3:33 My best guess is that it's a mix between 1. Thinning out a line in the middle (a fairly common lineart style) 2. Signifies that the two objects the lineart are "separating" are actually in contact or very close to each other 3. Signifies that the two objects have the same color, and in art with no lineart, these objects would probably blend into each other as a result. The lineart would be a way to physically separate them in a drawing, but without lineart, there wouldn't be a clear distinction.
This video is great and I loved the outcome of it. If there's ever a style to copy, you could try the project moon one, which I've only ever seen one review of if you are aiming for studies not done. (Sorry if it doesn't sound as well as I thought it would)

I liked it. It’s interesting how different artists break down a agreed upon master at their craft and how they replicate it
