I’m literally getting ready to make my first brisket ever. I knew exactly who to turn to for the best no-nonsense advice. I made Bradleys Alabama white chicken the other day and it was amaze so the brisket is up next.

This is the best brisket trim video out there. Awesome job! IMO the two most important things for brisket is the trim and the rest. Get those two things right and you are 80% there.

Explaining about the meat pulling/curling and causing the pooling and ruining the bark is the best explanation I've heard for why you trim a brisket the way you do. So often we hear *what to do, but not why*- Thanks Brad!
That explains why I've always got that pooling on the lean. I've watched a lot brisket trimming videos. Including your own. But this is the best one I've watched for WHY you trim it like that. Much appreciated!!!!

Great job, as usual. In my case, nothing is ever wasted. I render the fat into beef tallow and always use meat scraps for either beef bone stock or feed whatever else is left to my crows. My crows used to caw at my bedroom window every morning. I tried everything to run them off, even using sound machines and scarecrows, to no avail. I finally gave in and started feeding them. They love all the scraps from the brisket, the pork butts, everything. This stopped them from harrassing me. Win/win.
You know you did such a good job of keeping it funny and relaxed and educational at the same time you could have been a really school teacher but I'm glad you're a barbecue teacher instead

Another pro tip: throw the ground up fat that you’re gonna render for tallow in the smoker with your brisket cook! You’ll end up having smoked beef fat which is great if you want to incorporate a little smoke flavor into anything you want without having to pull out the smoker again. I use it to make burger buns or sub rolls and it gives them an amazing taste!
Only halfway through & I can already say this is by far the best trimming guide I’ve ever seen and I’ve watched a lot from some very reputable people. These are great tips, awesome video! Edit: the last section with the trimmings made the video even more special. Optimizing the final product & creating cost efficiency for a cut that is getting expensive. I absolutely love it.
I've said it before and I'll say it again....I've yet to find anyone on the RUclipss who trims a better brisket than ole Chud. It really helped my finished product when I learned to do it like him.
I used to throw away all my brisket trimmings... from watching your channel and smokin joes channel i've made sausage, my own burger grind and tallow. Feels good not to waste so much anymore.

I've been watching your brisket trim videos, of which are awesome, and then this one showed up right after I "butchered" a brisket this morning. In my defense, it's only my third brisket, but it's still disappointing. I plan on doing several more briskets this summer, so I'll be watching your brisket trim videos until my briskets start getting that professional trim look to them. I dig watching and learning from all of your videos. Keep up the great content!

I always use those trimmings to render down into tallow in the smoker. The chunks of meat confie in the rendering fat and make for an excellent cooks treat😋 The smoky delicious tallow is excellent for eggs, refried beans, etc...
I always felt badly about trimming so much deliciousness off my brisket, but now that I have a meat grinder and truly nothing goes to waste I'm so much happier! Even if you're not set up yet to make your own burgers, keep the fat and trimmings vacuumed packed until you can and you'll thank yourself!! As always, another great video. Dude, great video. Just a regular backyarder myself. But I've done 100ish briskets and feel pretty confident in myself. But trimming is still my weakest aspect. I never feel totally confident in my trimming. But this is the best breakdown for trimming that I've seen on YT. Very well done!

this is a great video. most trim videos show a great shaped brisket out of the gate. having an ugly starting brisket and making it look good is valuable information.
Great video as always. If I don't grind the trim for burgers I'll also smoke the larger trimmings for a few hours and freeze them for adding to baked beans or a pot of chili
I hate wasting product and that has made me hesitant about properly trimming, but with what you’ve demonstrated with the burgers and tallow it’s convinced me to do a better trim and reap the rewards of brisket burgers. Thanks and keep em comin’

I like using the meat trimmings for chili, stew, or braised for stroganoff. Anything low and slow to break down that tough meat.
