- Chicken pakoras are loved all over South Asia in various forms as a snack or as an accompaniment to a meal. Our intention with this video was to not only create a reliable recipe for the kind of chicken pakora we like, but to also put together a general framework for chicken pakora that you can adapt to your liking. With that idea in mind, we split up the recipe into six steps that should help you decide what choices to make to produce the type of pakora that you are trying to make on a given day.
We have also included tips for cooking them in batches and putting them away for a rainy day.

বিছানায় শুয়েই রেসেপি দেখে ছুটির দিন শুরু করতাম!(বাংলাদেশ থেকে দেখছি,তাই শুক্রবার আমাদের ছুটির দিন)

It can be eaten in 3 different styles
1- Before adding cornflour with rice as side dish.
2- With cornflour-one time fry
3- With cornflour and crunchy one- two time fry
All of them have different tastes.

If you drain the pakoras on a wire rack rather than paper it is less soggy. Paper absorbs the oil but does not quite drain it. A wire rack helps drain. Learned this trick from a chef friend.

It's a good recipe. But i would recommend something.
Pakora needs the flavor of kalo jeere or ajwain adding these gives the actual pakora type flavour along with other flavor inducing spices .
Using gram flour gives better taste. If liquid that has flavor is important. A flour that has flavor is also important.
Adding baking powder and baking soda makes the pakora more crispy. Also, if you follow the Japanese Karage style they fry it 3 times . I have tried it and this 3 time fry actually works well for extra crispiness.
If liquid flavor is important, flour flavor is important then oil flavour is also important that is why khati sorshe tel or mustard oil is the best to fry such telebhaja items.
And the last important thing is to add dry spice after the frying is done, like chat masala, amchur or simple black salt. That's how you get a chatpata lipsmacking pakora.

This is a good Chicken Pakoda recipe. But in my opinion the best and most perfect chicken pakoda one can ever eat is at this place called Hotel Girija at Bramhapur, Odisha. The chicken pieces are so succulent, juicy and tasty that one can never stop at one plate.
