I discovered AB's RUclips channel in April 2020, just after the pandemic started and I was furloughed from work. It was gratifying to see another black man being skilled in the kitchen, but "takin the mystery out of these recipes." His videos were the origination point of my so-called "covid recipes," food ideas I was trying for the first time, with the Cajun boil packets aided by Barbeque Dragon being my very first dish in May that year. It's great to see how far you and your business have come since then. Now March 2024, four dishes from his videos have become staples in my family (the boil packets, red beans and rice, Zuppa Toscana copycat, and Texas-style chili). As my wife and I now say, "I'm not gone overtalk it." Thanks AB, for keeping us company these past four years!
Quick follow up, made this one for the fam on Saturday. They always turn their nose up at Cajun/Creole fare, but they ate EVERY DANG BITE! left two little onion peels and a single chunk of Poblano in the bottom of the bowl. My butter sauce separated and looked clear and oily, so I took some LOL Butter with Sea Salt and Olive oil, that had sat out and was room temp, and added a couple of heaping Tbsp of that and I got a perfect butter paste (Note: I did add in a half capful of Zaterains Shrimp and crab boil concentrate, and some additional spicy Old Bay and Tony Cachere's NO Salt). The creole butter was incredible and soaked all through the corn and potatos, and into the Sausage (Kingsford Cajun Smoked sausage) and the king tiger prawns. Gotta give this one Griff's highest, 5 Stars *****. Thanks again chef.

I like to add mushrooms and carrots!! Those carrots just suck up the flavor!! Love this way of doing this so easy and full of flavor without having to break out the boilers. Thank you!!

Hey 🆎 The way you’re doing it is less clean up. Traditionally all of that would be dumped on a newspaper covered picnic table and folks grab what they want.. There’s a cooking term EN PAPILLOTE which involves wrapping food in paper(parchment)and cooking it. I watched Rachel Ray do this with a fish fillet.
Pretty fancy Boy Scout/Girl Scout stew. Learned that 50 years ago, meat, potato and onion, etc., but I object to the aluminum foil, so I don't do it. AB... this is serious. You said you are washing your hands, but did you really only wash the gloves? If you changed the gloves and washed your hands, that's fine with me. In my opinion, gloves are only what I call "hygiene theater" anyway, and it's better to use your hands and wash them frequently. Best wishes, you make some good food. I love the music, too.
