Wondering how to make a juicy brisket? Well I figured it out!! I cooked this moist brisket on my pellet smoker, proving you can make good brisket on a Pit Boss 1100 Pro.
I injected this full packer USDA Prime brisket with wagyu beef tallow and the results will blow your mind!.

Awesome thanks. I’ve never done a brisket. I have a 16lb prime I’m smoking today for Christmas. Merry Christmas

I've been injecting beef for years, I do an extra step for extreme juicy beef, I will brush beef dripping all over the outside, once that layer firms I will add another layer, I do this about 10 more tines. This will self baste and stops the beef injection leaking, but unlike yourself I won't wrap the beef I will roast in the oven on gas 3 170 electric, just result every time

Try using foil next time you wrap. I did 2 pork butts at once this summer. One I wrapped in foil and the other butcher paper. The foiled butt pushed over the stall within a few minutes and was done cooking in 10 hours. The butcher papered butt took close to 14 hours. And the foiled butt was much juicer! (I know this is brisket, but same idea)

No joke Tony, that brisket was definitely juicy AF! Awesome looking brisket, too bad you had to wait 24 hours to eat, but I'm sure it was worth the wait 100 percent!

Doesn't cooking it fat side up, take chance on The bottom with no fat getting dry or overcooked,, science has proved that the fat on top does not soak in meat when on top,, cooking fat side down keeps bottom from drying out,, just a thought
