My grandpa does kinda the same thing, but he makes a sauce with chilli, parsley, lemon, fish sauce and sugar and stuff, then he puts it on the raw scallops, adds unmelted butter to it, then cooks it on the barbecue.
So you kept the Roe/Gonads in place? I've never tasted that part. Only the white meaty part. How does that part differ in taste? Looks great / delicious. Thanks for the idea. I never thought to grill them.
