You always want to have the corresponding bannerman when you are massing units with Japanese. If you build a lot of archers try not to fight without the archer bannerman, same goes for samurai and mounted samurai. The Japanese units are balanced around the damage buff that comes with them so your army will be noticeably weaker without the right bannerman.
Yeah it might have been. Japanese doesn't tend to build a lot of siege because of how strong their infantry are at raiding but that definitely changes once you see castles coming up. A few rams may have been effective at slowing down his production and opening up the front side of his base

Building ram at about 20min seems to be a good idea to destroy his production buildings?
