How to make a Chopped Cheese on the Griddle - Harlem Style

- After doing a ton of research I will show you How to make a chopped cheese on the griddle. This might be my new favorite sandwich to make on my Camp Chef flat top grill! Although it’s made with ground beef hamburger patties, it doesn’t taste like a burger…. And it’s way different than a Philly cheesesteak.
I made this chopped cheese sandwich as close to the original Harlem chopped cheese as I could. I started by toasting the hero (that’s a sub roll to us) on the griddle. Then, I put the hamburger patties down on the flat top and let them cook on the first side.
While the beef patties cooked on the first side, I sautéed some chopped onion on the griddle. Then, once the hamburger patties had developed a little bit of a crust, I flipped them over and started chopping the meat.
Add the sautéed onions to the chopped beef and stir it up to combine. Then, shape the chopped beef and cheese until it matches the shape of your sub roll, and top it with sliced American cheese.
While the cheese is melting in to the beef, prep your toasted sub roll by spreading on some mayo and ketchup. Then, pile on the beef and top with shredded lettuce and sliced tomato.
Wrap the sandwich up in aluminum foil and allow it to rest for a few minutes. This allows all of that good beef grease to be absorbed in to the hero. Delicious!
For my first time making this chopped cheese sandwich on the griddle, I kept the toppings pretty traditional… but you can also add your favorite burger toppings.

Made this tonight. Very first bite my wife says "You're making this again." I don't know if it was a statement or a command, but it definitely was NOT a question. This sandwich is absolutely Fantastic! I changed up a couple things based on user comments: (1) I added the Adobo seasoning in the last 2 minutes of cooking (LOVE that stuff!) and (2) I made a spicy mayo (Dukes, lime juice, hot sauce, cayenne pepper, taco seasoning). Honestly, I was half way through the sandwich and I wish I would have made 2 just for myself. THANK YOU!

The point of the foil is to roll it so it “forms” the sandwich and help it steam together so when you bite it doesn’t fall out. Also lots will use adobo and/or chicken bouillon for seasoning. Excellent job!

Just something we found that we love with this sandwich, spread the mayo on the bread and THEN toast it. It gives it almost like a grilled cheese texture and is amazing! Just something we do with them. We also mix provolone and american cheeses (white american if you can find it). Thanks for sharing!!! Great job.

Can you get Bongaard slices where you live? Come in like 2.5 - 3 pound sliced blocks? It is a MN dairy, and Midwest regional probably, but their White American is the $h1+ on a hot sandwich. Worth trying if you see it.

Sazón or Adobo for seasoning, add salt/pepper near the end, right after you assemble the chopped lettuce and tomato. (Adding the pepper later also ensures one does not burn the pepper during the cooking process)

Great toast on that roll! On the seasoning thing, similar to pizza in Italy having similar basic materials but slightly different methods/seasonings/configurations from region to region, the ethnic preferences of the varied bodega proprietors will shape the seasoning they use.

Holy cow the Tiger Cruise. Yes my dad did the same thing. 25 years ago that means I was in the Navy during that time. HAHAHAHA the Nimitz was in the west coast right. I was in Norffolk Va for most of my time. Served at the Pentagon under Sec Def Rumsfeild and Camp David. Was on my way to the White House but my time was up and I went the civilian route. Yeah brother. Definitely completely different.
The seasoning is salt and pepper to start. After you get the onions and meat grilled you hit it with the Ramen beef seasoning then put on the cheese. Also, it is traditionally made with sweet peppers. At least that is how it is made at Haji's.

Amen. Honestly its more about eating healthy for her. She will eat a patty with mushrooms onions and a cheese. But she tries to stay away from carbs, especially white bread unless its her weekly dessert. Now that part is sacred and i know not yo mess with that.
They do use seasoning but I think it might be harder to find in Tennessee then it would in the NYC area it’s one of 2 seasonings Adobo or Sazón, both are made by a company called Goya it’s a Latin seasoning, but it will give it a different taste than salt and pepper does. Hope this helps, but definitely really good job on making a chopped cheese for the first time

Bread toasted both sides for a light crunch mayo ketchup your veggies but the way to really bring it all in is to get the sandwich paper wrap wrap it and let it rest for 2 mins then enjoy

Those foil sheets are the bomb for keeping stuff warm. Wrapping burgers or breakfast burritos & sandwiches steam in it and the cheese and the flavor I swear melds together.

The seasoning is Goya brand Sazõn
And they come in little packets and you should be able to find it in the Hispanic food isle of your local grocery store.

Hey Neal!! Was surfing the RUclips sea for chopped cheese sandwiches. Yours looks really good man!! I found a couple people saying the seasoning used is Adobo and other people say Sazon but I could be wrong. I know I heard one video with a owner or clerk of Hajji's mention Sazon. Still researching. When I saw that your vid was one of the search results I just had to check it out.

I just found another video showing a little bit more of Hajii's and it looks like they hit it with two seasonings and my guess is definitely adobo and the other sazon. That's what I'm going to try. Also looks like he hit it with a splash of vinegar as well. I totally don't want to mess it up either and between what I learned from you and watching the videos that I found pretty sure I'll get it.

Purpose or just salt pepper worked well. Try them all out on ground beef and see what ya think

One of the best chopped cheese videos I've seen. I am a chopped cheese master. The only feedback I have is don't burn your roll. A little bit to toasty. And you overloaded it with meat wich I'm sure you figured it out. Otherwise fantastic job. Score 9 out of 10. Most of the chopped cheese videos on you tube suck. The best ones are where your actually watching a chopped cheese being made in a bodega.

The only thing you needed to do was to wrap that baby up tight to let it conform to its shape.

Most common seasoning is Sazon (a Goya product).
Do yourself a favor and get a meat-grinder attachment for a standmixer. Grinding your own beef is a game-changer for burgers and the ultimate epicness that is the CHOPPED CHEESE.

You did a great job. I do agree you over filled it some. A burger ORa scandwich shouldn't be filled so much that it's really difficult to eat. But messy is alright. So I know you did this about a year ago. Go to the Munchies channel and watch the recent episode " chopped cheese " and checkout how he does his. He only says of his seasonings it's a secret. That might be why you were having trouble finding what everyone uses. No one wants to say. Anyway have a great day 🌤.

Honestly just after watching the History of the Chopped Cheese...the stores would have pre portioned patties. So when the idea was created to hurry up the story goes they just throw the patties right on the griddle and start to chop...creating the actual name..If you liked this I just recently recreated it...its the Chopped Cheese meets the Cheesesteak
