  • Here's a simple recipe for Paneer Vegetable Paratha:
    Ingredients:
    - For the Dough:
    - 2 cups whole wheat flour
    - Water (as needed)
    - Salt to taste
    - ajwain and kala jeera 2 pinch
    - 1 tsp oil (optional)
    - For the Filling:
    - 1 cup grated paneer (Indian cottage cheese)
    - 1/2 cup finely chopped vegetables (carrot, capsicum, onion, etc.)
    - 1-2 green chilies, finely chopped
    - 1/4 tsp black pepper powder
    - 1/4 tsp cumin seeds
    - Salt to taste
    - Fresh coriander leaves, chopped
    - 1 tsp ginger paste (optional)
    - 3 boiled potatoes (optional)
    - For Cooking:
    - Ghee or oil, as needed
    Instructions:
    1. Prepare the Dough:
    - In a mixing bowl, combine the whole wheat flour,ajwain,black jeera and salt.
    - Gradually add water and knead into a soft dough.
    - Cover and let it rest for 15-20 minutes.
    2. Prepare the Filling:
    - In a bowl, mix grated paneer, chopped vegetables,boiled potatoes,green chilies, black pepper powder, cumin seeds, salt, coriander leaves, and ginger paste.
    - Ensure the filling is well mixed.
    3. Assemble the Paratha:
    - Divide the dough into equal-sized balls.
    - Roll out a dough ball into a small circle.
    - Place a spoonful of the filling in the center.
    - Gather the edges of the dough and bring them together, sealing the filling inside.
    - Flatten the stuffed dough ball gently and roll it out into a paratha, ensuring the filling doesn't come out.
    4. Cook the Paratha:
    - Heat a tawa (griddle) on medium heat.
    - Place the rolled-out paratha on the tawa.
    - Cook for a minute until you see bubbles forming on the surface.
    - Flip the paratha and apply ghee or oil on the cooked side.
    - Flip again and apply ghee or oil on the other side.
    - Cook until both sides are golden brown and crispy.
    5. Serve:
    - Serve hot with yogurt, pickle, or chutney of your choice.
