My wife made this for dinner tonight. We bought a combo pack of noodles and sauce at the Lotus's in Nang Rong. She made with pork and garlic chives from the garden and it's delicious! Can't wait to have it again.
This is FAR superior to anything I have ever ordered in. Thankful that I now have a fantastic substitute for fish sauce. I love how you mention ways to personalize the dish. I adore crushed peanuts on the finished product. Warm greetings from TOronto!

If a noodle dish looks like it's "clumping" too much, I always find that switching to a pair of (bamboo) chopsticks in each hand gives great control to lift, separate and toss the ingredients through without breaking up the noodles too much.
As a "Flexitarian" I toe the line between vegetarian & carnivore but am constantly on the lookout for good vegetarian dishes to bring that toe firmly over the line. This is going on my list of must tries. Thanks for sharing!

made tamarind paste few days back and tried this today and i’m so happy i did! it tastes really similar to pad thai except that it’s more tangy and less sweet i think? lime was not necessary as you said. thank you big time for this wonderful video!!!

Can u make vegan version of papaya salad? I just found out I'm allergic to shrimp and crab but my cravings for papaya salad is so strong....doesn't help that I'm pregnant too.

Hi Camilo! For deep frying or stir frying any neutral vegetable oil will do - but for deep frying she tends to use Canola, and for stir frying Avocado oil. Cheers! Adam
Thank you so much for this recipe! I am Filipino and transitioning to vegetarianism, and was getting worried about satisfying my Asian food cravings. It seems like so many of my favorite Filipino, Japanese, Chinese, Vietnamese, Thai, and Korean dishes rely on meat and/or flesh-based products (like fish sauce or katsuobushi). I have made this a couple of times and am so glad to be able to add it to my developing vegetarian repertoire....
Amazing thank you for a vegan version 🥰 in Thailand I used to struggle finding this, so I just gave in and had their "vegetarian version' with fish sauce and tofu etc... I'm gonna try this out soon, I hope I can find the fermented soybean sauce in our area :)

I finally found pad thai noodles! My local supermarket only sells bean flour/potato starch/weird stuff noodles.. I'm excited to try my first pad thai soon!!
Okay I made this tonight but I added eggs and add carrot spirals and Oh my goodness it was AMAZING! Next time around I'm going to make daikon (spelling?) noodles in place of the rice ones. Let u know how it turns out!
I made this today!! :D I didn't have the soybean or miso paste so I just left it out, but it still tasted soo good, this'll definitely be a regular dish
Hi Pai, I am a bit confused, the pad Thai noodle I have, the direction says to be cooked in boiling water for 8 minutes, but yours just soaked in water for 1- 1.5 hours and will be ready to cook. which one is the "more Thai authentic way" ? Thanks and appreciate it.
1) noodle is the star of the dish, but to each's own if u wanna add even more veggies 2) it's already firm tofu, if u cook it for too long, it will become tough 3) oil gives one of the essential flavors in stir-fry dishes like this

If you have Doenjang or Samjang paste instead of Taujiaw/Tauchoo/Miso, just go ahead and use it. The taste is quite similar

substituting fermented soybean for fish sauce...putting the brown sugar directly into the shallots rather than the sauce...you are a genius!
Added cilantro leaves and some nems sauce before serving to "umamize" the dish a little further, yum, delicious, I can't get enough rice noodles !

I would add more vegetables, cook the tofu more and not so much oil. But best recipe for pad thai on youtube

the oil is necessary because the rice noodles are sticky. they will clump if u dont add enough oil
