1. JW CAFE, SUNDAY BRUNCH BUFFET

🐑ROASTED LAMB LEG: Pour olive oil on the lamb legs. Rub seasalt and pepper on them. Place on the grill for 3 hours. Flip every 45 minutes. Spread a concoction of melted butter and garlic. | Bone in ribeye: Same process but it takes 4.5 to 5 hours to be fully cooked.
🍣TUNA SASHIMI: Slice the tuna’s back thinly. Serve with soy sauce, wasabi, white radish, perilla leaves, pickled ginger, lime and lemon cuts.
🇻🇳GRILLED GEODUCK: Blanch the geoduck. Place it on the grill. Grill for 2 minutes then add scallion oil and ground peanut.
🐌GRILLED SNAILS: Grill the snails for three minutes. Add scallion oil.
🦞STEAMED CANADIAN LOBSTER: Cut the lobster in half. Place it in the steamer for 10 minutes.
🍝FETTUCCINE PASTA WITH FOIE GRAS & TRUFFLE: Pasta: Mix 13 egg yolks with flour, sea salt, blended beetroot (red color) or spinach (green color). Roll it out and coat with flour. Cut into fettuccine shape.| The dish: pan sear the foie gras and heat up the green mushroom sauce. Blanch the pasta. Plate the foie gras over the pasta, garnish with slices of Burgundy truffle
🍨KEM CUỘN (TEPPANYAKI ICE CREAM): Pour the vanilla cream base on the icing surface. Add many toppings. Chop the topping quickly then spread the cream flatly. Cut it into 4 portions. Roll it up, serve 2 rolls for each guest.

I love traveling to different parts of the world and trying their local buffets. So much to choose from! The fish is so HUGE! The lobsters are so DELICIOUS. I am glad that I have the taste of these food during my buffet journey!

I spent 30 years as an executive chef serving both catered meals and Sunday brunch at 5 star hotels and this has to be the finest meals set up I have ever seen. I have served TV stars, Kings and presidents around the world and I would be so proud just to work 1 of these food stations let alone be the Exec here. Thank you for a trip down memory (and gout) lane. This has to be one of you most guilt ridden videos I have ever watched
This reminds me of the type of spread that you see on upscale cruise lines. It's mind-boggling and incredibly beautiful. And I literally cannot imagine what some of those different foods taste like. I imagine having been a chef of equal caliber that this must boggle your mind as well! All you can do is eat with your eyes 😁🤩😍🌟

If you really did work at such high-end restaurants you'd have your own high-end versions of this. Hotels in Dubai as an example have impressive buffets. Howard Johnsons are not hotels worth note.
@@jennaburns8465 I trained at La Cordon Bleu in Paris. I have worked in Paris, London, New York, Grand Floridian at Disney World in Florida where I retired after a heart attack. Sorry I would NEVER work in a country that requires you to wear a diaper on your head and your woman to keep her face covered. I do have respect for people

this was a good series, among the other food reviewers, what i love about yours is it is really a show with details such as voice over and information rather than a food vlog.

Why though, most of Hanoi's quintessential cuisine value isn't here at all. Go to any fusion restaurant and chances you'll have these are very likely. For the buffet part, buffet restaurants are just identical tbh.
