I'm getting ready to start as soon as my plans arrive, would it be sturdier if I used a thicker ply for the base and buoyancy fore and aft? Say 12-15mm?

It would add weight and those sizes woulud not curve at the bottom but 9mm would work.

Does this method of taping the joints afterward work as well as doing scarfs/joints prior to stitching?
Not always as well as it often needs extra support clamped or screwed around the centre joint to make a fair curve.
