When i saw that you guys didnt fry the tortillas before adding the salsa in the chilaquiles. My mouth dropped. Always always fry the tortillas. Makes a world of difference.
The recipe they used was from a couple years ago... in my ✨oil free ✨ days. ... i have an newer version too, tortillas are crispy AF. . Either way, as someone who grew up eating them weekly, both good I promise 😅

an interesting point is that mesoamerican, pre-columbian food was mostly vegan. The aztec confederation had a mostly vegan diet, consisting of corn and beans, and only having the occasional meat-- usually turkey, but very rarely. The Raramuri are athletes of the Sierra Madre mountain chain who run like 500 miles over 2 days, often. They live off of chia seeds, corn, beans mostly. The spanish are the ones who used more meat, but most indigenous people live nearly vegan.
I'm Mexican and the way I do my chilaquiles is that first I fry the tortillas, if you don't want to fry them do to oil, you should put your tortillas in the oven with smeared with oil, this help to give a texture and the flavor is different from what you did. I would not eat your chilachiles, the tortillas were no tosted or fryied .
what I eat being poor in Chile: breakfast: a fruit, oatmeal and almond milk Lunch: Lentils and beet salad dinner: salad of lettuce, walnuts, avocado and tomato. Half a cup of quinoa.
I’ve never had fresh tomatillos before. All these foods looked amazing. I hardly cook Mexican food because I think it’s hard to veganise lol but your dishes all looked so delicious.

Pro tip for the chilaquiles: fry up your tortilla strips first and add just egg! The crisp on the edges of the tortilla strips is a game changer

Life hack: Put your plastic wrap in the fridge or freezer. Keeping it cold prevents it from sticking to itself.
