  • In this easy cooking video, I cook a beef chuck roast on my Weber Kettle charcoal grill. First, I seasoned the roast with kosher salt and Johnny's Seasoned Pepper, and then cooked it until the internal temperature reached about 135-140 degrees F, and seared it at the end. The temperature of the grill was around 325 degrees F most of the time.

When a younger woman, I was a single Mom of a hungry son and we couldn't afford steak. Soonce in a while I would buy chuck roast. I fileted it to get a thinner steak and grilled it on my old Weber grill. Best steak I've ever had! The got wise at the grocery and chuck got pretty high there for a while! Great steak tho..

I love grilled chuck. It's cheap, experiment and enjoy. I'm going to try the sear first then wrap in foil with green onions and go indirect while I cook other stuff on the hot side.

Fun cook.!.! Chuck "roast" is a pretty forgiving (and versatile) cuts: either low-and-slow or hot-&-fast. I don't mind this way either. I try to get one with a nice bit of marbling (local butcher said it could be more tender because it is from the rib-end) and slice thin against the grain for tender results. Putting it on the rotisserie is a fun project too...let it baste itself in its own rendering fat.

We always did chuck roasts on the grill when I was growing up, we weren't rich. Sure it's a little tougher, but the flavor is better than any other steak I can think of and if you slice it thin it makes the best steak sandwiches.
