If I'm out of ricotta I substitute it with cottage cheese, ,lol it's hard to get those noodles broke just right, you did great,lol melted enough, looks delicious 😋 have a great day

Crushed red pepper is definitely A LOT spicier than people who are not familiar with it think. 1/4 teaspoon would be plenty I have gotten distracted from things as well...sometimes they turn to coal, so glad yours was fine, ahah Thanks for sharing!

If using the lasagna that doesn't need to be precooked your recipe will be much drier because the pasta will soak up the liquid. What I usually do is if it's a recipe that calls for broth then I will soak my pasta in the broth for a bit but if there's no real liquid then I let them hang out in some water just to hydrate.
