You bloom the gelatin because as the gelatin absorbs the liquid, each granule becomes bigger and when the mixture is heated, the gelatin will dissolve evenly.
For pressed crusts like this I like to use a smooth round glass w/ a flat bottom - it gets right up into the corner & a bit easier than using a spoon or fingers. This is gorgeous, Nick! (and so satisfying to see that slice at the end). Perhaps a rainbow swirl baked cheesecake could be the next challenge? I'm curious to know how to keep the colors vibrant. :) ❤️🧡💛💚💙💜
