    It never occurred to me to make tacos with pork belly. Great job! Definitely gonna give this a go!

    I would say if you were planning on refrigerating the pork belly over night again, maybe take it a little further, but if you were going to let it rest, slice it and grill it immediately, you probably smoked it to just about the right temp to start with. Good looking tacos!
