  • Pad Kee Mao is a spicy stir-fried noodle dish that is popular in Thai cuisine. The dish is made by stir-frying wide rice noodles with a combination of vegetables and protein, such as chicken, beef, or shrimp. The dish is often flavored with chili peppers, fish sauce, soy sauce, and other seasonings. Some variations may also include basil leaves and other herbs for added flavor. Pad Kee Mao is often considered a one-plate meal and is typically served with a side of steamed rice. The name "Pad Kee Mao" literally means "drunken noodles" and it is believed that the dish is named after the fact that the spicy and strong flavors of the dish are meant to be enjoyed after a night of drinking.

If you can also please tell me what to use instead of fish /oyster sauce due to allergies. Can i use paneer instead of chicken??

These are the authentic ingredients used to make the drunken noodles. Fish sauce is used to give the salty flavour and oyster sauce give the glaze and sweetness. You could use hoisin sauce /vegan mushroom sauce/ sweet soy sauce as substitute. You can try making the paneer version. Best is to shallow fry them first till golden brown so that it doesn’t disintegrate and then add it to the noodles

Of course! If you can't find Chinese broccoli leaves, there are several alternatives you can use in your Pad Kee Mao. Consider using spinach, Swiss chard, bok choy, or even collard greens. These options may have different flavors and textures, but they can work well as substitutes. Just keep in mind that the cooking time may vary, so adjust it accordingly. Enjoy your Pad Kee Mao!
