Ya man! This exacty the way I do mine. Except I use Canadian 🥓. Further, I love that blue in the kitchen. I just painted the closet that color with a hint of teal in it. Bravo Monsieur!

Thanks for the recipe, I made these last night and they came out spot on. The only issue I ran into and was a huge bummer was that the potatoes we bought from the grocery store were not the greatest, As soon as I peed them I saw a green hue on the outside of them. I was already so far into the recipe that I continued. They came out pretty amazing but next time I will get some better quality potatoes, we had only had them for a few days too.

Joel my good Aussie friend, you know i'm Irish so you had me at potatoes. Great recipe & i've never had a potato i didn't like( unless it was rotten, one of the worst smells there is, lol), one thing i do change is rosemary, i don't eat it cause to me it makes my food taste like pine tar, i don't know why , but my wife likes it a lot. I sub fresh diced chives & i grow them in my garden. Being Irish, i eat some form of potatoes appx. 275 days of the year, & other days it is pasta or rice or no starch. Cheers mate ! btw, i can only find pancetta ocassionally, so if i don't find it, i use thick sliced hickory smoked bacon, it is good also.
@@recipe30 lol, i would if there were 400 days in the year, lol, i'm type 2 diabetic so i don't eat potatoes everday, but yes they are good with bacon & i prefer hickory smoked, i like pasta/rice dishes also, & you've had some real good recipes. Cheers mate !

Yeah green potatoes aren't the healthiest things you can eat. Try and find fresher ones next time. Enjoy!

It breaks down the pectin on the surface causing it to be rougher for a higher crunch.
