Hi Yenla. You can preheat the oven for 30 mins first. Then roast the wings at 200C for 20 mins. This is based on my estimation. Pls adjust the timing accordingly. Happy cooking!
Just went and bought some Shi San powder, but wondered about the chilli powder, that looks darker and chunkier than the fine chilli powder I have, what is it ?
I tried airfry chicken wing before but it doesn't turn out crispy like yours 🤔 if I add more minutes to airfry it, it will turn a little burn 😅 does the marinate make the chicken wings crispy? Instead of white wine, can I use shao xing wine?
Yes you can use shaoxing wine. The key to not making the wings burn and yet crispy is to cook them at lower heat first to let them cook through and then the last few mins at 200C. Hope this helps, Woodstock

Try this dry-rub for extra crispy wings: For every 1 pound of wings use, 1 teaspoon baking powder, 1 teaspoon cornstarch and 1 teaspoon of seasoned salt and combine the ingredients in a small bowl. Wash the wings, dry them with paper towels then dust all the wings with the dry rub mix. Wait 5 or 6 minutes for the rub to absorb and then put them in the air fryer at 385*F for 30 to 35 minutes. Shake the wings in the basket after 10 minutes then every 5 minutes or so until they are crispy. I then make different sauces mild, spicy, smoky etc so everybody gets to choose or eat as is dry rub only without sauces. I usually make 4-5 lbs of wings for 4 people. Buy air chilled not water chilled wings. They will be extra crispy wings and your friends will be amazed, so simple and so good.

Cumin is an important spice for Chinese bbq powder however, if you do not like the taste of that, you can omit it.
Hi Sara, Yes you can skip cumin if you don’t like the taste but it’s a very important spice for Chinese BBQ.
