I recommend trying pancit palabok. Pancit palabok is made from rice noodle with some pork, egg, and shrimps, and chicharon (dont worry the seafood taste is not strong, i would say i barely taste the seafood taste in it). U can find it either have thin or thick noodles it depends on the restaurant, some sell both versions.

Most Filipino dishes are meant to be eaten with rice, especially ones with sauces (ie. stews, soups). They are packed with flavor and rice is the equalizer. Mixing the stews (ie. like the vegetable stew, pinakbet) with rice helps alleviate the intense flavor of the dish.

the PINAKBET that you tried must have used anchovies (bagoong balayan) for its flavor. sometimes some regions use shrimp paste. others use broth cubes and cook it w sliced pork belly. how they cook it really depends on where you are. a tip when you make your dipping sauce: try soy sauce + kalamansi + oyster sauce + chili. you can use that for your fried dishes, steamed fish and grilled dishes.

Actually in the Philippines some food have different variation on each Region which make it unique everytime you go on different places. Like for Adobo, some region have coconut milk on it, some doesnt have soysauce, and also some have turmeric on it that make it yellowish.
One more thing, for some places, they have their own dish, maybe fruit, or snacks that they are known for. Like for example Cebu, they are known for the Best Lechon. Pampanga where Sisig is originated and said to be the best sisig in philippines. Quezon province, where you can find their own noodle dish called Habhab. Davao, where you can find a lot of Durians, maybe you can find different durian deserts/dishes there too, Baguio City where strawberries grows because of cold weather and having different food which they use strawberries, and also their special Ube Jam, Laguna where you can buy the amazing Buko Pie (Coconut Pie). And too much to mention.

    1. 'Kare kare' (ox tail). A stew cooked in peanut sauce eaten with boiled rice.
    2. 'Sinigang' (pork or fish). Sour tamarind stew eaten with boiled rice.
    3. 'Sisig' (pork face). Usually eaten with garlic rice or just beer.
    4. 'Chicken Inasal' (chicken). Grilled chicken eaten with garlic rice and chicken oil.
    5. 'Bulalo' (beef). Soup cooked with beef bone marrow eaten with boiled rice.

That dipping sauce is typical Cebuano indeed. It is the dipping sauce most common in Cebu that is made from coconut vinegar, soy sauce (alternatively salt), hot chilis, chopped white or red onions (alternatively green or spring onions). This dipping sauce is usually for meat (chicken, pork, beef, etc.) and fish dishes which are grilled, fried, and roasted.

Depending on what region/province you go to, each has its own version of pinakbet, adobo, sinigang, etc.
In Ilocos (northern Luzon), we use fermented fish (which has a milder flavor) instead of fermented shrimp in pinakbet. Some versions of pinakbet use oyster sauce. If you go to Bicol (southern Luzon), they usually add coconut milk and chillies (pinakbet + Bicol express).

With Filipino Food , Filipino always eat everything with rice. Some dishes have strong flavours like saltiness, sourness, spiciness and even bitterness. Rice in away acts like a neutralizer. You can have something very salty or umami by itself and then when you eat with rice, it becomes less salty or umami; it taste just right. You should try out the Filipino Breakfast like Tapsilog (Beef Tapa, Garlic Rice and eggs), Champorrado (Chocolate Rice Porridge) and Taho(Warm Soy Bean Pudding with Brown Sugar syrup and Tapioca). These are also great comfort food.👍👍😎

It’s been awhile since I’ve been to the Philippines to visit relatives… yeeaarrrsss. The food still looking delicious though! May I make a suggestion? The last time I visited the Philippines (again years ago), my family and I everyday would find a tricycle driver and ask if they can drive us around the whole day. Maybe try it to make it easier for you guys? If they say yes, set a price right from the beginning. And at the same time, you can also ask him/her if they can suggest any local must see that not many tourists know about. If you guys are having breakfast/lunch/dinner, you can tell them to just come back. Set a time and place. And then at the end of the night, give a little extra tip. It might be worth a try since I see you guys always having to wait for the jeepneys. But please be kind to the drivers! Treat them right, they’ll treat you right back.
    Have fun and stay safe!!

And when it comes to food and if you can find it, my favourite dish from the Philippines (and even here in Canada cause my mom makes it sometimes hehehehe) for breakfast is arrozcaldo/pospas/lugaw (named differently in different regions but are the same). It’s a type of Filipino porridge. Highly recommend!
And of course, Taho! This one is usually just in the mornings and the person would be screaming at the top of their lungs “TTTTAAAHHHHOOOOO!” If you ever come across, try thiiissss. And if you do, mix it well cause all the sweet syrup would always settle at the bottom of the cup. 👍

Strong flavours mixes well with lots of rice, so lots of rice = filling and more savvy. Thats how I understand it.

Pinakbet goes well with the crispy pata/pork trotter eaten with rice. That's one of the variations of how we eat it. Some restaurants will tweak pinakbet with crispy pork belly on top.
    Typical condiments mixed together
    *Soy sauce+kalamasi+fresh chilli/chilli oil
    Typical sides/condiments for fried foods
    *Achara or pickled vegetables
    *Plain ketchup
    *Spiced vinegar
We put ketchup on our sunny side up eggs when paired with a silog meal (i.e tapsilog, longsilog etc) Silog meals typically served during breakfast.
When in doubt, ask a local.
    Cheers and enjoy!

You might have noticed that Filipino dishes in smaller carenderias or eateries are saltier than in casual restaurants. It's because these small eateries cater mostly to locals who are fond of eating rice with every meal. The clientele of casual restaurants are both local and foreigners (expats and tourists) so their food is less salty. The saltiness can be neutralized by rice in every bite.

    • @ChaseandShelbs
      @ChaseandShelbs  2 года назад +1

That’s interesting because we have ate at about 3 or 4 carenderias and we have both agreed they needed salt. Not sure why! Also, try some pork sisig (make sure to mix the egg around if you'll try it), bistek tagalog, pork or chicken adobo, spare rib or pork sinigang, if you like vegetables try some chopseuy, also, try Mang Inasal. There's many more to try 😋
