Takes a lot of time and effort to train a good bird dog, but they’re so much fun to watch when you hunt. Half the fun I have is just watching them do their thing.

She seems a bit timid but she'll get it with kindness & simple lessons

This is DEFINETLY not the dog I would have chosen to demonstrate this with. She is in a panic the entire time. All she is thinking about constantly is when is the pain coming. Even If the pup is soft this just makes it all look bad.
Soft dogs are are very hard to work with correctly. Better you than me.

Teach the “hold” command first. Place a bumper in their mouth and give their bottom jaw a small pat and say “hold”. Repetition is key. Make them heal with you while holding the bumper and sit etc.... When they understand “hold” and have that down pat with their obedience training then move on and incorporate “hold” into their retrieves. When they are coming back to you after a retrieve repeat “hold” until they are in whatever position you want to receive your bird (heal, sitting in front of you etc)
sorry but that dog has had way too much pressure and not focused on excitement, I wouldn't follow the training methods of these guys. You are better off watching some of the greats like Bill hillman who has trained some of the best retrievers around or even Chris akin who puts out step by step DVD's. Just by watching this that dog has ZERO confidence and wouldn't surprise me if it was abused, or intimidation training was in place. If you wanna see a retriever perform at a high level and love every second of it watch bill hillman train, you will never see one single dog cower in fear and his dogs can out perform this every day of the week. Notice how his had gets closer to her face the dog winces and jerks away. Even if abuse is not occurring this dude is rushing through the session in a way that confuses the dog immensely and the dog has gets nothing but correction, this dog needs to be taught first, then correction will mean something this is so surface level the dog is just guessing what he wants instead of relying on the handler. Not to mention his basic obedience is either no where near finished, or not even being reinforced.
Yeah my thoughts too. The methods used seemed to be highly adversive (at least dor this special dog). This dog is very unsure and submissive. No happy working, no self-trust and environment-safe behaviour.
This dog needs more confidence, more positive reinforcement, more trust and much more obedience in a friendly way - and more precise training.
