Simple, just wash them, cut the second skin (the thick one). You can either cut them slices, or dice cut 5-10 cm, soak them in salt water, and fry. Simple and delicious. Or, you can clean, cut, and boiled them well, add sugar, and make some kind of gelatinous-like delicacy. So is blood clam. We call it "Kerang dara". Just boil it good, until the clam's "mouth" open. You're good to go. Serve it with pineapple + peanut + chili sauce dressing. It's a delicacy. And oh, we're rich with Rambutan fruits too. They ripe in season (usually October - December). But the best fruit taste is when they ripe in the dry season, their fruit flesh would be the sweetest. Just be careful with the ants. Yes, black ants LOVE Rambutan. Make sure to clean the fruit well before serve in on the fruit basket.

And i dont think sun exposure has to do with anything as long as the akee opens on it own you know its edible, some people pick ackee before its opened and put it down for it to rip.
