Nice review. Mitch's is known for their high quality seafood. Most of what you ate there wasn't sushi, it was sashimi. Thinly sliced fish without rice.
Do you normally don't use the wasabi or soy sauce? For me, it's hard to appreciate all the different fish flavor nuances without it.
It also helps to cleanse your palate in between different fishes by eating the ginger.
The Lobster Van Van is one of my favorites too. What does it for me is the really high grade Blue Fin Toro and Uni Nigiri.
Mitch's can be pricey but they do have some more budget friendly offerings like the Chirashi set for $28, which is a generous assortment of different fishes served atop sushi rice or any of their salads for $12.

Great restaurant choice! Being born and raised in Hawaii, it nice to see tourists try those hidden gems not in Waikiki Although I do recommend trying KatsuMidori om your next trip to the islands! \m/

EE If you're on Oahu you have to go to boots and kimos in Kailua. It'll be a long wait but trust me it'll be worth it. Just about anything on the menu is an absolute banger but make sure you try to go early! You also have Konos down the road from boots and kimos and you also have a few great places in the Kailua town area! I suggest Mexico lindo for their crab/Lobster Enchilada. If you're in the kaneohe area there is also Sikdorak 2 KJ's and Kozo sushi. There are many great places on the east side that won't break the bank. Don't be afraid to go to the more hole in the wall places and they will all treat you right!

Nice video. My only drawback the sushi is way over priced. And I am talking as a New Yorker going often to some of the top Michelin-Starred Restaurants that I and my mates eat at often. Or when I take that long long flight over to Osaka, man, talk about SEX. Brother you need to head over west bound to Japan. Not Tokyo, but hop on the Shinkansen in any direction out of the big city, and you will find love in the small but assailable sushi locations and eat some unreal food you have ever enjoyed. Peace and hearty travels. 👍👍
