    I got teary-eyed when you expressed how much Anthony's travels influenced you. I also grew up watching Mr Bourdain, Mr Zimmerman, Mrs Brown and so many others. Being able to live vicariously through others is a huge part of my life now. I appreciate your videos and you have gained a new subscriber.

    I'm a huge AB fan and a couple of my favorite things about Anthony is that he explored places not many would explore, ate with the locals and ate what many wouldn't dare to so thank you. If you can, go to SAPA, Vietnam and find a "Red Dao/Yao/Mien tribe" village and do a homestay with them and they'll feed you unique tribes food

    Thank you for trying Anthony Bourdain favourite meal. It's still sad how he passed away. I recalled he loved eating the banh xeo at a street resto from his closest Vietnamese friends and eating with Obama. Maybe tried those places out

    Thanks for the video. Seeing the Bun lady again reminded me of the Viet Nam Episode from Anthony Bourdain. I really miss him and I've watched every one of his episodes from a Cook's Tour to his final day at CNN.

    11:41 It's something everyone notices when they go to Vietnam: the people are extraordinarily friendly and welcoming. Everyone who comes with peaceful intentions is made to feel at home. It's all the more remarkable considering how often they have had to fight invaders and occupiers.

      Vietnamese have sufffered and fought hard for their independent and freedom throught history. A People who have expereineced a lot of suffering and horror of conflicts tend to gravitate to happiness, positivty and friendship in Others people. They dont approach different people with too much fear of the Others...for they know that the worst could be that they could be kill or that they have a fair chance of killing the Others. So the best approach isnto be friendly and welcoming and with peaceful intentions as a first policy instead of fear, suspition and guarded weariness...

    You can’t go to Hue without visiting the Ancient Town of Hoi An during night. Every now and then there’s a lantern festival and it is one of the most beautiful thing in the world.

    The reason you noticed a heavy French influence is because France ruled Vietnam for quite a long time and it was known as French Indo China for most of that time

    There is a huge French influence in Vietnam because France colonized Vietnam for a long time. I think ultimately that makes some Vietnamese cuisine very unique. I totally fell in love with Vietnam, though I spent most of my time in Hoi An.

    What a great way to honor Anthony Bourdain. Only in Vietnam you can get picked up by a random guy and go safely to your destination. 😆 I should know, because I was lost in the country side as a female and this nice lady came out from her patio and drove me 20 minutes to my destination. Funny when he said: for some reasons, the have a really good French influence. 😂

    At 3:34, it is not raw meat. It is either fermented meat (fresh sausage) or cooked sausage without preservatives.

    The dichotomy between the price of lunch and dinner is crazy! Really interesting to see the contrast meals can be from humble to fine dining. I'm not sure that's not the best bun bo Hue, but Viets do love bun bo Hue since it's pho's spicier cousin. :)

      As long as Vietnam is still ruled by the oppressive and exploitive Communist regime, her potential remains greatly diminished. For any 1% that wants to stay, 99% of the population wants to get out, and many have risked their lives doing just that (for example, 39 doomed lives found in UK container truck recently on the news, and that's only what's been reported), unfortunately. Yet another shocking and also recent example is that during the Covid pandemic when almost all countries assisted their citizens with financial aids in one form or another, the corrupt and murderous Vietnamese Commie regime saw it just as another opportunity not to help but to exploit its ruled citizens even more, essentially making money over the corpses of its citizens by presumably killing at least 30-50K of them, due to grossly misdiagnoses and being thrown into barbwired unhygenic living quarters for isolation, so that they had to sleep on concrete floor, even next to filled trashcans, with inadequate toilet, food, water, or medicine, like animals (searching hard enough, one is able to see shocking video clips on Facebook though the regime tried hard to crack down the leaks by Vietnamese citizen journalists), with the fake nostril Covid test kits, mislabeled as approved by World Health Organization (WHO) in Việt Á scandal, colluded by at least 4 different government agencies (Y Tế , Khoa Học, Công Nghệ, Quân y) and the top Politburo members, including Nguyễn Phú Trọng, Phạm Minh Chính, Nguyễn Xuân Phúc.

      Murderous Vietnamese Commie regime even had a thug murdered Christian pastor Giuse Trần Ngọc Thanh, like it has done with many other pastors across the nation. There is a reason why the current Commie Vietnam ranks at the bottom of the world in freedom of speech, (true) freedom of religion, and freedom of the press, barely above Commie China and Commie North Korea.       The corrupt Vietnamese Commie government officials routinely dine on lavish gold-plated Salt Bae steak $100K per meal with blood money not just from taxpayers but also from robbed-lands and robbed homes recently drew international condemnations, while many Vietnamese citizens, including elderlies in their 60's and 70's as well as kids as young as 6's to 16's selling lottery tickets on the streets to survive on $2-3 per day. Even Phạm Nhật Vượng the richest man in Vietnam (via his VinGroup) made the bulk of his wealth mainly by colluding with the barbarian Vietnamese Commie regime in selling their robbed-lands from Vietnamese citizens.     I remember watching that old old video when Anthony Bourdain went with his French chef friend. But I think Anthony meant bun bo Hue is one of his top 5 "dishes", not necessarily that eatery has the best bun bo Hue. Regardless, I see how xenophobic the world has become (yes, especially the Western world) and I appreciate and respect Anthony Bourdain even more for his willingness to show the beauty and goodness all over the world. Thanks again for taking the time to film and post these videos, I know how much time and energy it takes.

    The first dish you eat is sizzling pancakes or crepes and the second one is fried sticky rice dumplings, pork belly, mung bean, shrimp, the third one it Vietnamese Clear Shrimp & Pork Dumpling

      Sizzling crepes. I wish people would quit calling them pancakes...we all know pancakes aren't flat and big like that. And considering the French influence in a lot of Viet cuisine (not saying this one in particular), let's go with crepes.

    I flew to Vietnam in 2019. My wife and I spent a week in Ho Chi Minh and loved our stay. I rank my stay there 5 stars. I plan on going back soon.

      Part of that is the Vietnamese themselves. They undersell themselves and their time. I always hate it when Viets are like, "Oh, you paid too much for that! You were ripped off." When the amount isn't that much more (I saw a comment on Egypt where they were wanting $50 for socks, THAT is something you should feel pissed off at, not paying $.50 more for a meal in Vietnam when the meal is already dirt cheap). How are they ever gonna get rich if they charge barely above costs? Sure, they then have to work harder by getting the volume up, but they need to learn that quality also sells. Do you think Apple apologizes for how much they charge for their products and all the extra stuff you have to pay at a premium? No.

      @@hangeroo2439 In Vietnam, there are many places that are quite restrictive about setting prices publicly, so it is essential to ask the price before eating or buying something, if you find that the price is not reasonable you can refuse, VND Note that foreigners will be sold more expensive in Vietnam but if it gives a good experience, it is worth it! inherently many things in Vietnam are very cheap compared to other countries!

      @@hangeroo2439: great & interesting observation. You’ve tapped into the Viet psyche here. It may seem insignificant enough on the surface but if has deeper roots reflecting the Viet’s turbulence struggles just to survive !
      Generally speaking, (and I hope I don’t offend any Viets here since I’m one and feel I know enough having living oversea for 41 years and learning about & observing many cultures to commend on this topic) Viets place & know great value to all “things” associating to our survival. Beyond that, we don’t really place value on lots of other “things”. Is it because of the fact that we have been (from eon of time) busy surviving (and we’re v good at it) and no time/energy to “living”, really “living” to the point where it’s elevated to an art form, unfortunately. How can one places value on something one, organically, doesn’t consider valuable or have any notion of its value ? Just my observation. Please chime in and add to the conversation. Thanks 🙏

      @@ttran2859 I think you're correct about the focus being survival with all the wars fought throughout history there. But it's time to change as many of the Viets are rich now and the ones that aren't shouldn't work their ass off to get pennies for each item they sell. If they know their product is valuable or popular to the customers, raise the price just a little. Let's say they raise it by 20% and lose 20% of their customer, guess what? They still make the same amount of money but now they work less. And if their product is in demand and they don't lose 20% of the customers, then they make 20% more each year. I also know the other problem is that competition can be tough there as someone who sees you being successful will try to set up a shop next to you selling the same thing. I just don't get that mentality. A whole row of restaurants selling the same dish....do something different and unique to set you apart.

    that is one thing I agree, the people of vietnam is very friendly and accomodating toward tourist. They usually go out of their way to help you. However, there is always that .01% that can often be rude.

    You should visit Thien Duong cave, one of the most beautiful caves in the world. It is located in Quang Binh province. In addition, Quang Binh has more than 300 other very interesting caves

    Bun Bo Hue is a versatile dish and is a little different from region to region. From light broth to very savory, depends on the chef.

I just came back from vacation in VN and one of the things I noticed were how law-abidding the locals were- the majority of the people wore their masks, even if they were outside without others nearby. If you see people staring, it may be because you don't have your mask on. Just some food for thought for doing what the locals do

    Vietnam was controlled by France from 1877 until the start of WW2 where japan took over but the influence may have stayed from that time period.

    I cannot believe how cheap everything is!!! That's crazy!! That seabass looked fantabulous and I'm not even a huge fan of fish. Curious which sauce was your favorite?

      @@chris-yh9yj lol well he was there and he told us the prices of everything. The one meal he had which came with multiple dishes was only equivalent to 2 US dollars. If you got something like that in the US..it would cost about 40 US dollars. From everything he said he got..not just food..it was cheap. So yes, he knows. And now so do I cuz I learned from him. May not seem cheap to you but to us Americans, it is way less than we are used to. If you came here..you'd understand.

In Vietnam, there are all prices for food to serve from the rich to the poor, usually street vendors or small shops will have affordable prices for 90% of people, while restaurant chains branded will have the same price as developed countries and have a higher standard of service than usual.

      VN is one of those places one can really live on the cheap. However as they say, you get what you pay for. Many people still live with bare necessities which is why you see such low prices. But to have a good standard of living there can be extremely expensive. I mean there are uber rich people living there with private jets and all...

    I ate at the bun cha restaurant in Hanoi AB took Pres Obama to. It was nice but I think it was chosen for security reasons. There other ones equally good around the old Quarter. I liked the food he recommended in Istanbul and even chanced on the crazy funny taxi driver he used. Will miss him.

      You are spot on on the security aspect. I am a Hanoian and I actually dont go to Obama's Bun cha to have its best version. There a few places which make it better, all around the Old Quarter of Hanoi.

    Never been back, but I heard my late father's house in middle of Saigon got split in half and owned by 2 different families. Oh well tis life. I can eat them noodle soup daily. Glad you enjoy.

    taste many noodle soups in my life. the viet pho is superior to the rest. chewy noodles, hearty aromatic broth, and the combination of beef parts is phenomenal. you have to order the viet ice coffee also.

    FYI: In 1858 the French came to Vietnam. In 1893 the French incorporated Vietnam into French Indochina. France continued to rule until it was defeated by communist forces led by Ho Chi Minh in 1954. That's the reason for the French influence in Vietnam.

    Fun video, but Bro, Vietnam was a french colony for many decades. Fortunately the only cultural remains are reflected in the food. thus, good coffee, great bread, and amazing deserts.
