You're very welcome, Marylina. And thanks for the love and appreciation. About the sugar, I too had thought the same thing. I thought that could be the original reason why someone added a little sugar in addition to the jaggery. But the sugar is not added later on after finding out the dodol needs more sweetness. It is added at the start. So the reason could be something else.

How long we can keep this and can we keep it out or it should be refrigerated?
Dodol has a short shelf life and will stay good outside the fridge just for 2 - 3 days. That's why I suggested in the video that you should move it to the fridge within 2 days. In the fridge it will stay good for around 10-12 days.
Being homemade dodol, it has no added preservatives.
Recipe and information about dodol was amazing.correct me if I am wrong, sugar is added to give body to dodol as the jaggery is soft.
Thank you, Philip, for your appreciation. The quantity of sugar is too small to make a noticeable difference in the texture of the dodol. But yes, I agree, it would add some body to the dodol, but in a very small way.
My mom a burmese resident would make this sweet, this is familiar in burma as well

@@joanf2050 Oh. Just saw this. Yes Joan, you can. Only, the dodol will have a lighter brown colour. The taste however will be almost the same.
Hi Veena, Tried this recipe. But the rice flour 110 gms is too less for 300 gms jaggery. It turned out like jelly.
Don't know how that could have happened, Anita. You're the first to have had this experience. The rice flour thickens the coconut milk and has nothing to do with the sweetener- jaggery. And in my opinion, 110g ( almost 3/4 cup) of rice flour is more than enough for thickening the coconut milk extracted from 3 cups of grated coconut. You can see that in the video. You must have not cooked the dodol for the required amount of time. That's the only explanation I can think of. Also, you have to remember that the texture of dodol is like a shaky pudding/ firm jelly that is soft but holds its shape.
Date palm jqggery is required..other jaggery wont do...u explain very well
No, Diana. Traditionally coconut palm jaggery is used. But on amazon I could only order date palm jaggery and so that's what I have used in the video.
Can we store dodol without refrigerator or by adding a preservative. Pls let me know. I am going to try it out with readymade coconut milk . Will this be ok ?
Yes, Irene, you can add readymade coconut milk. Homemade dodol has a very short shelf life. So it's best to store it in the fridge within 2 days. Then you could enjoy it for around 15 days or so. I'm not aware of what would be a suitable commercially available preservative for dodol.

Yes, Madhura. As soon as it cools down, transfer it to the fridge.
sugar gives good taste for dodol
Yes, Lifa, sugar enhances the taste.
Use black rice
A good option, perhaps, Esther. But that's not a traditional Goan ingredient.
