    RECIPE:
    Levain
    60g Sourdough starter
    60g Warm water
    120g Self-raising flour or AP Flour
    Bread Dough
    500g Bread Flour
    75g Water
    75g Olive oil or any oil you have
    4 Medium eggs
    90g Honey or Sugar
    10g Salt

    Beautiful! May I ask if it is important to proof the final braid for 4 hours? I live in a hot climate and I am concerned proofing for that long a period will overproof. I'm still a newbie at this and especially sourdough challah. I normally do the final proof regular yeasted challah for 30 minutes. Does the sourdough need the longer proof? Thank you for any advice. I appreciate your beautiful work!

    I’ve got the levain mixed & waiting till tomorrow, could I let it cold proof on the last rise (tomorrow is Thursday). I want to bake Friday morning for Shabbat
