The only thing that has not worked for me are the macaroons, but that's before. I thank you for sharing your recipes. Greetings from New Jersey.
I'm gonna try this recipe but for my own spin i will reduce the fresh pineapple blend to a concentrated fruit puree, this will eliminate most of the natural water in the pineapple as well as produce a more concentrated pineapple flavor. Also this will give room for the addition of milk for a more classic cake taste. Thanks for sharing.
This looks amazing. For your Tuesday tips could you do a chocolate tempering one maybe please? I noticed a while ago (around Xmas I think it was) you had some moulded chocolates on a cake etc. Thanks again for all your lovely recipes. I’ve not only made many but so have my daughter and her friend now too! x
you guys can roughly temper your chocolate by only melting two thirds of your total amount and then adding the last third. that is going to leave it nice and shiny and with a nice crack to it after fully drying :)

I love this recipe! I've usually included carrot and coconut in the recipe and the cake is topped with an orange marmalade buttercream. I think I'm going try this version, as I think it will be favorited amongst more people.

I do the same thing with my bananas 🍌, putting them in the freezer when super ripe. Always use mine for banana bread. My boys love my banana bread. 😁 Ive never made a hummingbird cake but this looks quite delicious...can’t wait to try this cake. 😋 Some of my friends tried the pineapple hack but didn’t work like all these videos we see!

I made this once for my oldest daughter's birthday and really enjoyed it. I like looking for the oldest recipe I can find when trying new things so I know how it started before people start fussing and fixing the recipe. So I found an old magazine recipe, no picture, and for the topping it described (poorly) arranging the pecans in a hummingbird pattern. I had been hoping you'd do that so I could figure out what the heck it meant. I ended up doing pecans along the edge and a large letter in the center (first letter in DD's name).
Nice! Although fyi in the States "whizzing" means something totally different than using a stick blender. LOL Oh and absolutely with the pineapple! That's how we enjoyed them when I was a kid: you cut the top off and scooped out chunks.

I use cake tin wraps, they help the cake bake flat so it eliminates cutting off the top. Is there another reason you cut the top off other than to level it?
Hi is it possible to use melted butter in the cake as apposed to vegetable oil if so would it be the same amount as the oil thank you so much for all your beautiful recipes
Butter is stiff at room temp and therefore behaves differently to vegetable oil which of course remains liquid. If anything, you can use margerine, vegan butter, or coconut oil. 😊
Oh could you pretty pretty please make a sultana cake 🙏 🙏🙏my nan used to make sultana tea cakes and they were delicious but when I try to make it the sultanas sink to the bottom. I’ve made your carrot cake and it’s the best.... this one is now on my to-do list. Thank you so much for the time and effort you put in for us 😊
Is there a reason you don't use cake strips (other than getting to snack on the extra parts)? Also doesn't the buttercream get rancid if you store it in room temperature?
