The first noodle dish reminds me of tibetan thukpa and also laphing ( cold spicy noodle) the fried food that you referred to as a cracker is called Khapsey in Tibetan and it alsp looks the same and is made the same way but tibetans also make Khapsey in many other different shapes

Luke for your information: Uyghur's are Turkisch and muslim peoples. They are not chinese people. Uyghur cuisine is affected by mostly Turkish, muslim cuisines and less chinese cuisine.
You can see with your own eyes how they live in Xin Jiang, China as it's definitely accessable for visitors, not just believe what the mass medias want you to believe for some political agenda.
That food looked friggin' amazing. Would love to do this tour some time myself! When I used to live in KL, I used to go to this place that made handmade noodles from the Muslim Chinese area, and they were incredible.
We are from Malaysia. Of late there has been Uyghur refugees in Malaysia opening up their fantastically display of cuisine through restaurants. I hope the Chinese government get their just rewards for treating the Uyghurs with 0 humanity.
