caught 3 dart last time in Qld like you I had fun, didn't bother to fillet them, cooked in al foil with herbs etc on hot plate, nice kept the juice in fish and very tender and tasty
We have been toying with the dart on lures project for a fair while now. Great to see you crack the code. Funny, but I'm almost sad that our tradition of digging the pippies and pulling the beach worms to crank a few dart may have come to an end. I guess a gutter full of whiting might bring that all back.... or spawn another project 😉
Learnt beach fishing while chasing Dart as a kid on the beach at Wooli - trusty Alvey 600A, 10' rod, pipis popping up at your feet. We'd chuck them up the beach behind us so Mum and my little sister could dispatch and gut them and we could get the next cast out as quick as possible.
You hear people say certain fish are no good to eat, but like you said, spike em, bleed em and keep em cold and it's a totally different kettle of fish. Talking about spiking, you'll be posting me one of those spikers real soon, that looks a much better way than my rusty knife. Gonna get some of those lures as well, you can never have enough, great stuff mate
Sammy, I grew up.camping at Coolum Beach every school holidays. My mum would say go and catch us enough fish for dinner. Dart was the target species because they are great eating and plentiful in the 70's
I went fishing at Coolum beach just in January this year. Caught tons of dart but all only about 20-25 cm. Idk if it’s overfished but it was still good fun

Hey mate! Yeah more than likely a flatty in there somewhere! I have an electric knife sharper by a company called Nirey. I use that once or twice a year to reprofile the edge. Generally I just use a sharpening steel and give it a quick hit before I start 👌

Those Dart look a lot like pompano or palometta on the East U.S. coast. Delicious eating and strong fighters. Pompano are one of the the highest price per pound fish here.

Hey mate, I use Shimano reels in most of my videos mate and have rod from just about every brand. I like to pick the best tool for the job 👍 I’ve only recently got onto the ATC reels and found them to be really good for the price of them too 👌

Wow a specialised Dart session! Never seen one before, love catching them myself and agree with you, very good on the chew and just a lot of fun overall! A lot of our unrated Aussie fish are actually when prepared well great at table. There is one fish off the beach that I’m not sure about in that regard. Would you ever go one of those Australian Salmon? Are they worth bothering with or best left well alone with regards to the table? One thing however I’m sure we can all agree on, they are one hell of a sport fish especially if you don’t go too heavy. Stay well Sammy! Hope The Phantom’s good too.
Mate, bled promptly after catching, Aussie Sambos are a great eating fish in my opinion. Bit chewier than your other common table fish, but if bled properly, they're good tucker. My favourite method is to clean up on any blood lines on the fillets and pop em in some foil with some butter, garlic parsley, or any other combo of flavour and pop them in the oven.
Aus Salmon are the best example of this, they are excellent eating in many ways of cooking, but just because they don't suit a beer batter when not prepared or taken care of some often lazy people in Aus say they are horrible. Reality is if you prepare them right and use them for what they are suited they are just as good if not better than many other fish. Everyone I know believe it or not much prefers Salmon over Tailor, because we know not to leave them in a bucket all day and expect them to be amazing drenched in canola oil and thick batter... The key is simple really, bleed and brain spike on capture, KEEP THEM COLD, fillet skin and cut that red muscle running skin side out (this muscle under the skin is where the strong taste comes from), portion and either Panko breakcrumbs pan olive oil and the usual herbs and spices and lemon, or put in a curry/pasta any dish you'd use with tuna, or slice thin and do your favourite ceviche recipe, or smoke with the usual glaze of brown sugar basil and whatever else you prefer (possibly the best way of all). Make sure to cook them within 2 days (another fault people make, Salmon due to being very high in natural fats dont last as long as other fish in the fridge), and they are as good as many other fish. Give one a go I reckon, of course better is out there, but as someone who is pretty damn picky with seafood and eats the likes of coral trout etc every week, Aus salmon are still one of my favourite species to catch and occasionally cook up for lunch 🤙🏽

I had a fillet of Salmon which I caught down near Batemans Bay pan fried with veges and thought wow this is really good what’s all this hearsay about Salmon not tasting good? It had been caught that morning and I had bled it. I get back to Sydney and my fishing mate goes on about That vile Salmon and I’m like no that’s not my experience I’m not buying into that, but you just start to doubt your convictions but it’s resolved now and our great Aussie fish now officially tastes good.
I’ve never actually eaten an Aussie salmon to be honest mate. We don’t get them up here so I’ve never had the chance. Very keen to give it a go though! I’ll keep you posted if I get one 🍻🍻

Wow a specialised Dart session! Never seen one before, love catching them myself and agree with you, very good on the chew and just a lot of fun overall! A lot of our unrated Aussie fish are actually when prepared well great at table. There is one fish off the beach that I’m not sure about in that regard. Would you ever go one of those Australian Salmon? Are they worth bothering with or best left well alone with regards to the table? One thing however I’m sure we can all agree on, they are one hell of a sport fish especially if you don’t go too heavy. Stay well Sammy! Hope The Phantom’s good too.
Mate, bled promptly after catching, Aussie Sambos are a great eating fish in my opinion. Bit chewier than your other common table fish, but if bled properly, they're good tucker. My favourite method is to clean up on any blood lines on the fillets and pop em in some foil with some butter, garlic parsley, or any other combo of flavour and pop them in the oven.
Aus Salmon are the best example of this, they are excellent eating in many ways of cooking, but just because they don't suit a beer batter when not prepared or taken care of some often lazy people in Aus say they are horrible. Reality is if you prepare them right and use them for what they are suited they are just as good if not better than many other fish. Everyone I know believe it or not much prefers Salmon over Tailor, because we know not to leave them in a bucket all day and expect them to be amazing drenched in canola oil and thick batter... The key is simple really, bleed and brain spike on capture, KEEP THEM COLD, fillet skin and cut that red muscle running skin side out (this muscle under the skin is where the strong taste comes from), portion and either Panko breakcrumbs pan olive oil and the usual herbs and spices and lemon, or put in a curry/pasta any dish you'd use with tuna, or slice thin and do your favourite ceviche recipe, or smoke with the usual glaze of brown sugar basil and whatever else you prefer (possibly the best way of all). Make sure to cook them within 2 days (another fault people make, Salmon due to being very high in natural fats dont last as long as other fish in the fridge), and they are as good as many other fish. Give one a go I reckon, of course better is out there, but as someone who is pretty damn picky with seafood and eats the likes of coral trout etc every week, Aus salmon are still one of my favourite species to catch and occasionally cook up for lunch 🤙🏽
Thank you Coza H.B. for yr long, involved reply. Both you and Sammy say they’re great eating and that finally settles it for me. I had a fillet of Salmon which I caught down near Batemans Bay pan fried with veges and thought wow this is really good what’s all this hearsay about Salmon not tasting good? It had been caught that morning and I had bled it. I get back to Sydney and my fishing mate goes on about That vile Salmon and I’m like no that’s not my experience I’m not buying into that, but you just start to doubt your convictions but it’s resolved now and our great Aussie fish now officially tastes good.
I’ve never actually eaten an Aussie salmon to be honest mate. We don’t get them up here so I’ve never had the chance. Very keen to give it a go though! I’ll keep you posted if I get one 🍻🍻
