    When you peel it, I can perceive the smell right here because I know this stuff and I eat it all my life.. we actually use it for soup... dry it up and grind the seeds for soup.. it’s super tasty together with palm nuts juice

    Sounds like quite the flavor bomb.
    I think you have 3 skills/ attributes that make you quite good at this:
    1. Interest in trying new stuff
    2. High flavor sensitivity
    3. A really impressive mental vocabulary for flavors, meaning that you can both encode and recall flavors well. (E.g., it's impressive when you make connections to other stuff you've tasted--maybe only once.)

    Several species of the same genus are found in Tropical Africa. The seeds of one of the species Aframomum melegueta is the famous "grains of paradise" .

      I was wondering if that was "grains of paradise." I use to sell them at spice house in Chicago, alton brown has a great apple pie recipe using them.Thanks for confirming!

    Not sure how comfortable I am with calling Aframomum species "wild ginger". I mean, it's the "ginger family", but so are cardamom and tumeric. It's not even in the same subfamily. Aframomum is most famous as the genus of "grains of paradise", a peppery spice that once was very popular, fell out of use in the international trade, but has recently been gaining in popularity.

      It was sold under the name gingembre sauvage. but that is a good point. Its closer to cardamom or grains of paradise in flavor.

      It’s okay, your preferred taxonomy is not invalidated by cultural names. And both names can exist simultaneously, you can pick which you use based on context. It’s an interesting fact about the genetics but maybe not so much making it about your comfort. They can call it whatever they want and it doesn’t hurt the scientific taxonomy.

    Oh to brew tea with those fresh seeds right out of the fruit ... I bet that would be better than those stale dried seeds you had to use. This one was super interesting and I really want to try the fruit and seeds myself what a nice description!

      Just google "grains of paradise". It used to be almost impossible to find, but lots of places sell it nowadays :) It's the latest spice trend.

    Really great example of a spice with confusing flavor helping us to understand why we use the spices we do so regularly like pepper, cloves etc. being that they have a clear taste. That purity allows the cook to have more control.

    Have you ever noticed the lemon smell and flavor in ginger that we get here? It took me years before I really noticed a strong lemon component to our hand Ginger. Yes I could give the species and family but it's late. I had a fruiting ginger in Morocco. The man would come around with a cart full and then you brought out your bowl and he would take the outside off and it was full of seeds but it was really good and it was great for people who have constipation just saying! ;-)

    We roasted the seeds in a pan and then put them to grind. We only used as many as we could for one meal because there was no pepper grinder it was a brass mortar and pestle. But it is and I coined the name over in Morocco the everything spice.

    Would like to try it in a pumpkin pie replacing the ginger. Because the ginger can get a bit overwhelming and distorts the cinnamon taste, leavening a bitter aftertaste. That not even cool whip can hide.

    When you say "cardamom flavor", I assume you mean the woodier, drier black cardamom as opposed to the sweet green mainly because of the spiciness description. If I'm wrong on that guess, I'm interested in knowing. I am obsessed with the spices, fruits, and vegetables this world has to offer, and basically want to try everything.

      I actually haven't tried black cardamom yet, but it's very possible. These are related to grains of paradise, so the flavor is similar to that as well.

    Funny thing is, the name there, "Gingembre sauvage"seems to refer to asarum caudatum, a wild ginger species that's native to the Americas.

    I use whole milk, cardamon, cloves, and bay leaf, and tea, no water. Bring it to a boil then allow to simmer for 15 minutes. Add sugar to taste. It's delicious!

      New York City isn't going to have aa problem with rampant tropical plants. Taking seeds like that to Florida or Hawaii would be more problematic.

      His friend’s name is Steven I believe and he owns his own farm where he tries to grow all these crazy fruit. I think he might have his own channel where he does similar work but I haven’t looked into it.
      I noticed the knife was upside down too but I think he meant to do it that way to not cut too far.

    Hmm... can you try it on pizza or on a salad (with olive oil or sesame seed oil plus vinegar and maybe some Italian seasoning)?

      It would be good in a dressing. I made mustard and threw in some of the ground seeds and its nice, does add a bit of complexity to it

I have my own chai masala (with dried rose petals, Genovese Basil, Ram Tulsi, Ginger, Galangal, Lemongrass,Fennel seeds, Licorice, Marjoram, Nutmeg, Clove) . You would be blown away. Don't worry I take plenty of precautions when hygiene is concerned. You're always welcome.
