300 grams, 00 Flour
10 grams, Kosher Salt
3 Whole eggs
3 Egg Yolks
Pork Filling:
350 grams, Ground Pork
150 grams, Ground Mortadella (no pistachios)
90 grams, Ground Prosciutto di Parma
150 grams, Grated Parmigiano Reggiano
1 Egg
1/2 Nutmeg Grated
20 Turns of Black Pepper
10 grams, Kosher Salt

Bravo! I’ve always used a pasta machine cranked by hand. I graduated to a kitchen aid (Alice saver) but I’ve always wanted to try rolling it by hand. But I wonder how you keep the dough from drying out with such a large sheet.

if we wanted to add spices to the pasta, like saffron, would this be done before the dough is made? like adding some saffron to the eggs then incorporating it with the flour to make saffron pasta dough?

Currently just one. We are getting busier and expanding soon!
can whole wheat flour be used for this recipe?
Yes you can. It will be a bit rougher of a dough but it works.

@@brooklynpastalab so I ended up doing the pasta recipe and it was pretty moist, like sticking to everything. Is there something I can do to fix this? Just add more flour? I love the egg pasta though and this is the best recipe I’ve found so far.
@@iBMcFly just add a bit of flour! This works best on a wooden surface.
