  • Best Focaccia Sandwich
    I made these with a sourdough focaccia. Just something I was trying out. Use whatever focaccia you want. I’ll do a video on that another day.

    Lately, I’ve been experimenting with Italian sandwiches. Capacollo, Salami, Proscuitto, etc., on char/grilled focaccia or ciabatta, marinated mozzarella balls and Tuscan black pepper cheese (sort of like Parmesan) melted on top of one side of the loaded sandwich, shaved onions, a few chopped grilled olives, a spread made by mashing cream cheese with jarred artichoke bruschetta, some arugula, and finishing off with a little syrupy balsamic, and then I like to wrap it tightly in parchment as they would at a deli and if I have time, put a weight on it for a few minutes, to compact the ingredients and marry the flavors. It makes such a tasty summer lunch alongside some refreshing watermelon chunks or grapes.
    Considering this, it seems ironic that, although I’ve been fortunate enough to visit New Orleans several times, I have still never experienced the “muffuletta” sandwich, which seems very much in this Italian sandwich realm. I blame New Orleans for having such a bounty of good food to choose from that the muffuletta has this far has always missed the cut to some other fare. Next visit for sure, though!

    Hi Chris I can't get. Buttermilk anywhere can I use ordinary milk when making soda bread thanks

      Yes just add 2 tbsps of vinegar or lemon juice to it. Stir and let it stand for about 10 minutes before adding it. You’ll need an acid to activate the soda ☘️
