    I taught sourdough bread at a local university. A 1 pound loaf was proofed and cooked in an 8 inch stainless steel dog water bowl with another on top to hold in the steam. Total cost from Dollar Tree, $2.50.

    I'm a beginner baker and I'm still baking completely flat frisbees. I guess I'm a professional flat frisbee baker.

    The dutch oven supported the size of the dough. So for open bake, I put the dough in a round spring form pan to support the shape and keep the dough from spreading out.

    I use actual bread loaf pans, cast iron frying pans, spring form pans, dutch ovens.... all seem to work well. I will have to try the cookie sheet self rise option. Great share.

    Nice loaves! WRT the ice.. if you were to use a pot or something heavy bottomed and then just put it in the oven empty when you start to pre-heat then add your ice to it when you put the bread in to bake it will provide you more steam and you will get a better result.

    Anyway is it possible that the dutch oven held the shape of the dough together in a tight space, and also restricts horizontal expansion in the oven, which is why it rose higher instead? But if you for example bake a much smaller dough inside the dutch oven vs without dutch oven...both would have ended up with smiliar shapes and sizes? That's something fun to try out too

      Ya that’s kinda what I was thinking as well. Maybe I’ll have to try to make a small loaf in my Dutch oven and see what happens :) or better yet, I need a bigger dutch oven 😂 haha

    If you have a cookie sheet upside down on a rack above it and do same temp as a dutch over it will rise the same as a dutch oven. Also spritz the dough and over walls with water.

    Use 2 dog bowls for each loaf. One bottom, one lid. Oil and flour coat the bottom one.

    There's more than one way to turn the oven into a humid environment. One way is to put a small soup pan with water in it in a back corner of the oven and then turn the oven on to preheat. Some people throw ice cubes down on the bottom of the oven or put a wide pan on a lower shelf and when they put the bread in, fill the pan with boiling water. Don't have a Dutch oven? Don't fret. Nice open oven loaf, BTW.

    I like to butter the crispy crust when it comes out of the oven. It makes the crust tender and soft, but it's not as pretty as yours!

    Make sure to get a thermometer for your oven! When you put ice or water into the oven, it significantly lowers the temperature and doesn't bring it back up to a specific heat level. Only those who use a thermometer can know this. 2:34

      Oh hey I never even thought about that! I guess that makes sense! I mean the bread always bakes through anyway but I guess that’s something to take into consideration thanks!

    For the times you bake bread in a dutch oven, instead of simply removing the lid for the second part of baking, have you considered removing the bread entirely from the pot and paper and just baking the bare loaf on the oven shelf for the remaining allotted time?

    I wonder if the crust of the Dutch oven loaf would have been better (crisper) if it were removed from the pan and placed on a cooling rack?

      The crust from the one in the Dutch oven actually turned out great! But yes if you leave the bread in the Dutch oven to cool, the bottom gets a bit soggy so I always try to remember to take it out as soon as it’s done :)

    Just FYI (from a long time sourdough baker) you need a oven/bread thermometer to test your loaves internal temp for doness. The internal temp needs to be 200* or better to be safe for eating. Sourdough should have a strong crunchy crust, with a moist soft interior You are well on your way to being a wonderful sourdough baker!
