Caramelized Onions - Water-Bath Canning

  • This recipe is called a jam, but it is due to the sugar in it to preserve it. This is delicious on grilled cheese, burgers, baked potatoes, and a great topping on many dishes!!

    This was a very good video. You explained everything very well ? I am looking forward to making this
    recipe ! Your canning technique was awesome and correct ! I am a
    Master Canner and took my classes at Oregon State University. It is nice to see proper
    canning technique! There are RUclipsrs that are showing people that are new canners the
    open kettle method ! I just shake my head with disgust !

      please dont knock what has been used for hundred years, how do you think they persevered before pc, It all a mater of ph and acidic levels, for it to work. Just because the government says it so does not mean it is right,

    Oh boy! Making this today. Had to look up how many cups of chopped onions 4lbs are. 34 3/4! Looks & sounds delicious. Thanks so much.

      Decided 34 3/4 cups looked like too much so am cooking 16 cups to = 4 lbs since I don’t have a scale. Does that sound about right? Internet is all over the place as to how many cups is 4 lbs

    Hi there! I was wondering about your opinion on lowering the sugar content or even replacing the sugar with Splenda? Do you think it would still be able to be water-bath canned and shelf stable ? Thank you for any tips!

      That is a good question!! The recipe I followed doesn’t give any advice on swapping sugar for Splenda. It does state that you can replace the total amount of sugar with 1 cup of maple syrup. I hope that helps!!

      Thank you! I'm gonna give it a try and I'll let you know if it's good. I have replaced sugar in things that have vinegar before but to be fair, it's never been balsamic vinegar so I'm not sure how it will work out. I usually put less Splenda too because it comes across a bit strong.

    Hi! Thanks so much for your video. If I don't have canning salt where I live, is there something else I can use? Or is that optional? And do you put the jars in when water is boiling or you put them in right away? Sorry newbie here 🙈

      Welcome!! So happy you found my channel!! If you don’t have canning salt, Pink Himalayan sea salt would work. I do not have a dishwasher, so I sterilize my jars in my water bath canner with the water boiling. Once you have filled your jars with the onions, put them in the canner. Make sure the water level is a good 2 inches over the lids of your jars. Place the canning lid on the canner, but don’t start your processing time until the water reaches a rolling boil.     How long is the self life of these caramelized onions? Do hot water bath onions last a few days in the refrigerator or do they have a long term storage self date? There is absolutely no information on this that I am able to find.

      Once you have water bath canned them, they can be on the shelf and will last for at least a year. I hope that helps!!

      Welcome!! You can use any type of salt that doesn’t contain iodine. Iodine can make the end product look unappealing. I’ve used kosher salt and pink Himalayan salt before as a substitute for canning salt. Hope that helps!! Thank you for subscribing!!

    How fun is this that I stumbled on...can I use balsamic vinegar glaze if I don't have regular balsamic vinegar???

      I’m glad you found my channel!! I would stick to balsamic vinegar. The glaze is already thick and I’m not sure what would happen to it if it cooked as long as it needs to for this recipe. If you do try using it, let me know if it works. Have a great day!!

      I’m happy to hear you are going to try this recipe. I would recommend 1/2 pints or pints. I don’t think you would get a lot of the onion in a 1/4 pint jar. We love them on baked potatoes and grilled cheese sandwiches!!

      @Wills Mountain Homestead thank you for getting back to me...we don't eat alot of onions ..I wanted to try your recipe it looks so good...I was going to put some in 8 oz jars and 4 oz incase we don't like it...I don't have a pressure canner...I use a water bath canner...so if I find new recipes for water bath I'm gonna try ..I like your channel I like how you show and tell us what to do....thanks again
