Prickly ash-flavored pastry! Particularly popular in China and loved by both children and adults!

  • • Ingredients: Pricky ash and salt-flavored ox tongue-shaped pastry
    Black sesame (cooked) 50 grams, 0:30,
    White sesame (fried) 50 grams, 0:34,
    Peanuts (fried) 50 grams, 0:48,
    Flour (cooked) 220 grams, 0:58,
    Icing sugar 10 grams, 1:20,
    Salt 5 grams, 1:23,
    Pricky ash 3 grams, 1:25,
    Mix all the above materials except peanuts and ground into powder. Then add the peanuts in the grinder and blend it to be granules. Finally add 120 grams of lard(2:26) and knead evenly.
    Water-oiled dough: get 200 grams of medium flour(2:36), 100 grams of water(2:45), and 60 grams of lard(2:50), knead into a smooth dough, wrap and relax for half an hour.
    Pastry dough: get 200 grams of all-purpose flour(3:15) and 100 grams of lard, then knead into a smooth dough.
    • The ingredients prepared is enough for making 20 pastries. It’s easier to handle if we make 5 at a time. Brush on them some egg yolk mixture which made of two egg yolks(6:02). Then put them into the oven.
    • Baking temperature for an 80-liter oven: Preheat the oven to 180 degrees on top heat and 180 degrees on bottom heat, and bake in the middle of the oven for 10 minutes. The filling is already cooked, so we only need to bake until the surface is brown and colored.
    • The temperatures in the recipe are all in celsius degrees. Fahrenheit degree=celsius degree*1.8 + 32°F。

    我自己尝试做了!小包酥手法,皮子非常酥脆,就是觉得内陷10克糖实在是太少了!这种咸甜口的中式点心,糖的量还是要有一点增加的,十克绝对太少了!口味太过寡淡了!
