5:02 it actually goes -- 2nd fret, open string then 1st fret... this 1st fret makes a huge difference I can't believe he is teaching it wrong... the rest of the lesson is great though

That is correct. You are missing the note on the 1st fret of the E string (which in this tuning is E up from E flat.)
