- omg this self sauce pudding is amazing and easy to make. serves 6 to 8. recipe written below.
3 cups blueberries fresh or frozen
1/3 cup caster sugar
batter
110g butter at room temp.
3/4 cup caster sugar
2 large eggs or 3 small eggs
1 tea spoon lemon rind
1 tea spoon vanilla extract or essence
1 and 1/4 cups plain flour
1 and 1/2 tea spoons baking powder
1/2 cup milk
syrup
3/4 cup water
1/4 cup strained lemon juice
1/3 cup caster sugar
1. get butter out chop and leave til soft at room temp.
grate lemon rind and juice lemon set aside
2. pre heat oven 180 degrees C
24 x 19 cm deep oven dish on a baking tray
make sure shelf is in the middle of the oven
3. bowl blueberries and caster sugar mix put in dish set aside
4. beat soft butter and sugar on low til light and fluffy
5. beat in eggs on low 1 at a time
6. add lemon rind and vanilla beat on low til mixed through
7. in another bowl flour and baking powder mix together
8. get milk ready
9. put half the flour and half the milk in butter mixture and mix through
then put rest flour and milk and mix through
10. spoon into dish spread out set aside
11. small saucepan water lemon juice and sugar
med heat stir til starts to boil take off
pour over batter using a spoon
bake aprox 55 mins til cake firm and bubbling around outside
sit for 10 mins before serving
