Thank you sister for showing it for the benefit of new generation learners. I ate chintakaya pachchadi many times at Hyderabad which is good in taste. But, Telangana chinthakaya pachchadi is not so tastier compared to Andhra chintakaya pachchadi. My wife aged 62, retired superintendent of central government prepared 5 kgs alone within a day. I have bought all ingredients, but I never help her or she will not allow anyone in the process. Our preparation is different. She will remove the chinta ginjalu. The pickle will remain for 4 to 5 years. We don't use green mirch at the time of preparing raw chintakaya pachchadi. We use all ingredients as you used, but without wet (water) in anyone like menti pindi or other ingredients. After grinding in stone Rolu, she will remove chinta ginjalu and through them in the garbage. Keep the pickle in matti kunda/bana/ ceramic jar and store it. It will remain for many years. But generally, we will use it for 2 years. Whenever we would like to eat it, we take some quantity of raw pachchadi with dry spoon and mix them in Rolu with fresh mirch, Dosa ginjalu, dried pallies, onions, dhania leaves etc., And put tiragamatha/ thalimpu with oil, hing and other thalimpu ginjalu including 2 red chillies cut into pieces. We eat with hot white rice and ghee. That will be Amogham. When anyone falls sick, the beginning initial rice eating will start with this pachchadi or miriyala charu.This 5 kgs pickle was prepared at my house 4 days back for sending to all our three USA settled children, grand children, especially for our 2 years old last grand son. Chintakaya pachchadi will be tastier in AP and Telanga. When we were working at Bombay , we use to prepare it in our same manner. I request you to try in this style and you will find more tasty chintakaya pachchadi.
