Soft and Fluffy Lemon Cake

  • A fluffy Lemon Cake recipe with a plush, lemon flavored crumb, a tart lemon curd filling, and an airy whipped cream cheese frosting.

    Ingredients
    3 Tablespoons fresh lemon zest¹
    ⅓ cup fresh lemon juice 80ml, I usually need 3-4 lemons, zest your lemons before juicing
    ⅔ cup whole milk 160ml
    ½ cup vegetable or canola oil 118ml
    4 Tablespoons unsalted butter softened (57g)
    1 ¾ cup granulated sugar 350g
    2 teaspoons vanilla extract
    3 cups cake flour² see note to substitute all-purpose/plain flour (330g)
    1 Tablespoon baking powder
    1 teaspoon salt
    6 large egg whites³ room temperature preferred
    ¾ cup lemon curd³ 175ml
    ICING⁴
    4 oz cream cheese softened, but still slightly cool (use the brick-style, full-fat cream cheese, do not use the spreadable kind sold in tubs 113g)
    1 cups powdered sugar divided (often called “icing sugar” outside the US, 125g)
    3/4 teaspoons vanilla extract
    1/8 teaspoon salt
    3/4 cups heavy cream cold (175ml)

    Instructions
    Preheat oven to 350F (175C) and prepare two 8” round cake pans by spraying with baking spray and lining the bottoms with parchment paper. Set aside.
    Zest your lemons and set zest aside. Juice lemons until you have ⅓ cup of juice, whisk this with your milk and set aside.
    In a large bowl using an electric mixer or in a stand mixer, beat together oil, butter, sugar, reserved lemon zest, and vanilla extract until completely combined.
    In a medium-sized bowl, combine flour, baking powder, and salt and whisk well.
    Stirring by hand, gradually alternate adding the flour mixture and lemon/milk mixture to the butter mixture, stirring until just combined after each addition (I start and end with the flour and add the flour mixture in 4 parts and the milk mixture in 3 parts).
    Place egg whites in a separate clean, dry bowl, and beat on high speed with an electric mixer until stiff peaks form (see video or photo in post for a visual if needed).
    Using a spatula, gently fold egg whites into cake batter until completely combined (don’t use your electric mixer at this point or you will over-beat the batter). Divide cake batter evenly into prepared pans and bake on 350F for 28-31 minutes or until toothpick inserted in the center comes out clean or with a few moist crumbs.
    Allow cakes to cool in pans for 10 minutes then run a knife around the edges to loosen cakes from pan and carefully invert onto cooling rack to cool completely.
    Once cakes have cooled completely, prepare frosting.
    ICING
    Combine cream cheese, 1/2 cup (62g) powdered sugar, vanilla extract, and salt in a large bowl and use an electric mixer to beat together until creamy and smooth.
    In a separate bowl, combine remaining (1/2 cup/62g) powdered sugar, and heavy cream. Beat with an electric mixer until stiff peaks form (mixture should be thick, billowy, and the same consistency as Cool Whip).
    With mixer on low speed, stir together the cream cheese and whipped cream until completely combined.
    Pipe a dam/border along the inside rim of one cooled layer of cake (see photo in post). Fill with lemon curd and spread evenly inside the dam.
    Top with second layer of cake. Frost the entire cake with remaining frosting.
    Keep cake refrigerated in an airtight container when not eating. Enjoy!
    Notes
    ¹Be sure to avoid the pith, or white papery layer just above the lemon flesh, when zesting. The pith is bitter and will make your cake bitter.
    ²You may substitute all-purpose flour, you will need 2 ⅔ cup/330g of all purpose flour.
    ³Store-bought lemon curd will work, but I recommend making my homemade lemon curd. You would only need a half-batch for this recipe, BUT a whole batch uses 6 egg yolks. Since you need 6 egg whites for this cake, I recommend making a full batch and enjoying the second half on whatever you’d like!
    ⁴This recipe makes enough for a semi-naked cake covering. If you want to fully cover the cake or pipe designs decoratively on top of the cake as shown in the photos, I recommend increasing the recipe by 50% or even doubling.

    So I'm not a baker but I tried two of her recipes one was the German chocolate cake and the other is this lemon cake when I tell you that my family ate both of these cake up like there was no tomorrow they loved it and it was easy to make so for now on she is my go-to for recipe I loved it

    Made this cake yesterday, but used oranges instead of lemon. Everyone loved it, the cake itself super soft and fluffy. This is a very good sponge recipe.
    For the icing I used a thicker greek yogurt + sweetened condensed milk+ sugar. It contrasted nicely with the cake gave it a nice tangy/light feel to it.
    Also thank for going straight to the recipes , showing the final products, and writing the recipes down in the description in detail (footnotes and everything)

    I've made this cake three times. On my fourth today. Can I say how stellar this recipe is? So light! So soft! So soft and light 😉 tart lemon in the middle counterpoints the creamy frosting. Note: I like to make it in a square (instead of round) 8" pans. Then I can neatly slice 1" some of the pieces, wrap individually and wrap and freeze. For those days when I tell my teenager that 'I didn't make dessert... Go get some applesauce'. Then my husband and I share a secret piece from the freezer. Anyway, 🙏🙏 my favorite of your recipes

    I made this today...
    Absolutely-friggin-delicious!
    The best thing about this channel are the recipes are easy to make and they taste sooo bloody good. No fancy utensils, straightforward instructions, clarifications on which ingredients works best (i.e. brown & granulated sugar) and boom..you have yourself a flipping good cake. Cake flour and lemon curd are 'must haves' in my kitchen from now on.

    Thank you again for making such great videos that are easy to follow and give great results. Today I tried this recipe. In truth, I made the curd two days ago and had time to make the cake today. It is the third lemon cake recipe I have tried and this recipe is perfect. Other ones were too dense and did not have enough lemon flavor.     I haven't tried this particular recipe, but have made cakes filled with lemon curd and topped with cream cheese and whipped cream frosting. The combo is absolutely delicious. I sprinkle my frosting with coconut at the end and it's so good. Will try your white cake recipe the next birthday that I make it.

    This recipe is so good! I made it with all purpose flour its very moist, I have to say its like eating a sweat lemon it has so much flavor I just loved it. Thank you for sharing. One more thing the the batter was enough for three 6in cake pans.

    I have got to make this cake....love lemon...this recipe may be as addicting as the brown butter chocolate chip cookies!
    Years ago there was a restaurant in Phx Guggy's....they served a fantastic Champagne cake with a rum pudding in the center...I wish you would give champagne cake a try...it was so moist neither of us have ever found a cake like it...

    I'm the type who doesn't love cooking leave alone baking, not because I'm lazy but simply I don't like it. But, today, GUINNESS BOOK OF RECORD is itching to find me haha! I was searching for a cake recipe to order for my son's 2nd birthday and came across this. Not sure what really happened but a strong feeling told me to do it personally.
    I watched the video twice, went shopping for ingredients, and started baking. I did the whole process pausing and unpausing the video Lol! My oh my! Tears of joy as the unexpected happened. They came out so well, so great, so delicious name it. (I baked 3 of them by the way).
    We didn't even wait for them to cool and ate hot. I'm minus two as I wanted 3 for the birthday. I'll bake the other two tomorrow plus the decoration.
    Another amazing thing is, I didn't use the oven I don't have one and instead used charcoal (traditional fire) and a jiko(traditional oven Lol). Plus no butter, I used Margarine. I didn't use vanilla extract either. The results were really amazing though.
    Thank you so much for the recipe, I'll keep on trying many often. I love how things turned out. I think I've fallen in love with cooking and baking. I'm a lemon girl I think that's why.

    Would you please say how long do you cream the sugar and oil/butter for and on what speed of the hand-mixer?

      Thank you so much, Sara! It typically only takes 30 seconds to a minute to cream those things together and I work the mixer up to high speed to ensure everything is well creamed. :)

      Do you use the same amount of mixing time for your vanilla cake as well when you cream sugar and oil/butter mixture?

    I made a diff lemon cake recipe & I'm not a baker..my cake turned out dry & dense. Not cake like at all..
    I used a hand mixer.
    After watching ur video I just realize its dense cz I blended the flour into the bqtter..ty for explaining it.

      You shouldn’t notice the granulated sugar after it’s mixed in and baked. I’m not sure how the caster sugar will turn out

    I do not have a pipping bag may I just spread /frame the cake with a thick lawyer of frosting all the way around then add the lemon curd in the middle?? For my daughter s 23rd. birthday cake tomorrow! She love lemon cakes!! once again thank you so much!!!!

    This cake looks perfect. Thank you for this recipe. How long will it last in the fridge, and how can I adapt the recipe for 6” pans (2 preferable but 3 pans if the recipe won’t require adjusting)? With stay-at-home still suggested where we are, there’s just two of us. Does the cream cheese help stabilize it in the same way as my whipped cream with Greek yogurt stays perfectly fine for three days, or will it get weepy?

      The cake should last for about a week in the refrigerator and you shouldn’t have any issues with the frosting weeping or anything like that. The recipe as is will make just a little more batter than you would need for 3 6 inch pans. I would just discard any extra batter and make sure not to overfill the pans. 😊

      @@SugarSpunRun the cake was perfect, it was the filling that was messy. The top kept sliding off taking filling with it and when I would slide it back over it would squirt out the other side. I chilled everything well before I started the assembly. I am guessing I put too much curd, I Love Lemon curd. I just finished it up today (even better the second and third day!!), it set up well in the fridge overnight and I never had anymore trouble with it. Thank you for the recipe. 😁

    Hi Sugar Spun Run, one question: why doesn't the spreadable cream cheese work? If I were you I would use the spreadable cream cheese straight from the jar with out adding any extra sugar/cream. I would also make lemon curd icing for this cake.

      The frosting here is pretty soft already so if you use the spreadable stuff it will be even softer and potentially not work at all

    Turn your zester over the lemon so you can see what you are zesting and just tap it to unload the zest on the paper. You hold the lemon in the left hand and just use swiping motion of the zester in your right hand towards you and you can see the pith line and move to a new area (reverse hands for lefties).

    I want to thank you so much for this recipe. I printed it and made the recipe exactly as written and used metric measurements. It's a wonderful wonderful recipe. Everything turned out delicious but, the lemon curd was very soft for a filling texture for the cake. Even though the cake is light it still was composed of some weight. I ended up spreading the lemon curd on one half of the cake, freezing it in place, adding the second layer, using a spatula to smooth what dripped, then iced once again solid. Do you have a recommendation for next time? I really want to make it again as it was very delicious. I like to use two 8" square pans so I can slice in rectangular slices to store. The cream cheese frosting is too soft to act as a barrier to the lemon curd (like a frosting dam which I've done in the past), but after freezing it the cream cheese icing does turn almost completely solid. Anyway I'd love to hear your take! Loved the textures together, the ultra soft luxurious pure white cake with tart lemon. Wish I had another piece!

      Hmmm this is an interesting dilemma. Did you make the lemon curd yourself? It may have needed to cook just a bit longer to thicken up. the cream cheese frosting is soft but should still work well as a dam in this cake. That's how I kept it from going all over the place. I'm glad you enjoyed it overall and I hope this is helpful. :)

    So I do not have egg yolk? And aldo you beat your egg white without cream of tartar? Is it OK if we put a little cream of tartar and sugar to make the egg white more stable?

      I did make the lemon curd cake per instructions but I did substitute cake flour for plain flour. It was delicious but I personally thought it wasnt real fluffy. More pound cakey.

    I noticed there is no egg yolk. And when you beat your egg white, you did not put cream of tartar or lemon juice. Can we put 1/4 tsp of cream of tartar to make the beaten egg white more stable? Thank you and please reply

      That is correct you only want to whip the egg whites. I am honestly not sure how the cream of tartar would work. I have never found it to be necessary. If you do try it I would love to know how it turns out.

      Yes I have tried it, unfortunately the blueberries end up sinking in the cake. It still tastes good, but presentation isn't the best. ☺️

      I had a hamilton beach that I absolutely LOVED, but it just broke and they don't make it anymore. I just got one made by Breville, it was a bit pricier, but it worked very nicely the first few times I used it.
