Not because it is impossible, but because (according to Boeing themselves) it is not economically viable to do so. Any change which requires recertification will require additional updates elsewhere to meet current standards since grandfather rights have expired. This was the reason that the exemptions for the MAX 7 and MAX 10 had to be extended.
If anything saves Boeing it's the production bottlenecks. Who cares if Airbus has much longer order lists if both can't satisfy market demand anyways? Chinese planes could become a real problem though for both Boeing and Airbus. It's easy to imagine airlines turning to Chinese models, simply because the delivery times of the big two are endless.
The delivery time of Chinese aircraft is also endless (if you count hundreds). (And please tell me the Chinese monthly production rates in comparison to 321 XLR).

Worse, within both ranges, the lowest fuel consumption per passenger per 100km is with the largest variants. A 737-Max7 will never complete with an A321 (XLR or not) for the same load factor because it’s the least efficient model of the lower efficiency series that is being compared to the most economical model of the more efficient range. Now, your fantasy 737-Max-7 (if it is ever certified) will have 128 seats compared to 220 on the A321XLR. Add in an extra fuel tank to the 737-Max7 to get the range, and you end up with fewer seats, less hold space and worse fuel economy.
I hope Cyprus uses this plane to connect Europe with Asia. Larnaca could become an airline hub like Dubai or Doha.

Boeing should have done several 757 Max variants instead of 737 Max variants. But it is to late now.
