Maybe you should try to use 'Arak Bali' as main liquor instead of Rum to make it more 'Bali'. I've never tried to mix it in cocktail but maybe it works
Maybe you can make a Klepon cocktail? rice infused alcohol, clarified brown sugar using coconut milk and lime juice, pandan and Suji leaves (another local leaves usually used alongside pandan for color) syrup and coconut water. Might work
I love Pandan. Fresh is almost always best especially with herbs. You should try making the cocktail again with Dried Pandan, it gives it a completely different flavor and give it a different mouth feel

I went to a bar tonight and had a Brown butter infused bourbon old fashioned. It's really great how fat washing can not only add to the aroma but also the mouth feel of a drink. What I think might be a good idea would be to do a bitters comparison, whether angostura, peychaud's, walnut, orange, etc, etc. Be really interested to find what uses or cocktails you'd recommend for each type. Keep the vids coming!
Watching you talk about the apricot and pandan together makes me wonder if you're able to get Durian in France, could be an interesting substitute. Could almost bridge the gap with it, and is a very popular fruit and flavour in Balinese cooking.

You can use Extract no problem. Just make sure it'S the good stuff. The green water that comes in cans usually doen'T taste anything.

Interesting. Never tried to dry Pandan. How is it different?
I feel it looses some grassy notes and takes on more of intense floral flavor.

There is also a Pandan liqueur called Bandoeng 22 Pandan Liqueur.
that's very nice, but klepon use palm sugar, which gives it more complex taste. you should use it next time 😁

Some cocktails will require a real apricot liqueur. I saw that you use a classic one from Giffard. Can it substitute the premium one from Giffard?
