Hello, I loved your garnishes, I make many with that style, for the sticky one I use honey and flowers since the flowers weigh more than the powder and I use the cucumber roll with a rosemary inside , I never made one with a stencil i will try , thanks for sharing your knowledge. With some cocktails that require eggwhite, it is a laborious process: split egg, dry shake the eggwhite first, then ‘wet’ shake with the other ingredients et cetera. can I also use the eggwhite foam from the siphon during mixing for these cocktails? Love to hear it from you 😀

It's absolutely not necessary. If you want inspiration without citrus look for espuma recipes in the culinary world

Well the burnt wedges should be made a la minute. The zests on the other hand can be prepared a couple of hours before/ just keep them in humid towels
