- This week I'll be making Greek meatballs with tzatziki sauce and buttered zoodles; feta tomato salad with roasted green beans and pork chops; Buffalo chicken dip with pork rinds and celery; Pork Neck tomato gravy with ricotta and a fresh salad; and avocado chicken salad.
The recipe for Greek meatballs and tzatziki is from this recipe EXCEPT that I use ground beef and or lamb and add 2 tablespoons of finely chopped fresh mint.

This was the inspiration for the avocado chicken salad. I use chicken (obviously), add 1/4 cup finely diced purple onion, and add 1 tablespoon mayo. I also add bacon from time to time.

Wonderful ideas , I'm a farmers daughter and I can't believe I have never heard of pork neck bones lol Just listening to you describe it made my mouth water :)
I watched your other videos on sauces and butters . Those were very good too. I can't do a lot dairy or cheese . which really limits me. I also check labels and I've been searching for a Mayo that doesn't have a bunch of junk ingredients . Even the olive oil one has added sugar or soybean in them. I have made my own ,but I only have a small amount at a time and I don't trust it if I keep it too long . It gets too runny after it sits also. I see that you watch for that kind of stuff . Do you have a favorite ?

Lol! If you try pork neck bones let me know. We first had the tomato gravy with pork neck meat at a fancy schmancy restaurant in Chicago. They used the ricotta and I knew I had to try to recreate it!
As for mayo, I use Duke's when I don't make my own. I've learned to make really small amounts, but even so we don't generally use it all.
I never think to try to remake a lower carb version . Makes me think about my favorite Chicken N' Biscuits - I miss sooo much !! I live in a small town and all they have is a Hannafords. Or I have to drive an hour to get to our bigger stores. Price Chopper and Wallmart . So far I have yet to see a Duke's . Maybe I will have to order online, which I have been doing more . Thanks :)

+Julie Klimczak-Monroe Very small amounts. I might have a handful or two of berries (blueberries, raspberries, blackberries), but when I do I pair them with high fat such as creme fraiche, marscapone, heavy cream, etc. Hope that helps!
