Super simple weeknight casserole that makes easy leftovers. It has all your favorites of a Rueben sandwich without the wheat and carbs! / 107875353548336093
I love making Rueben Casserole. I layer mine with the bottom using pork rind croutons. I make my own ketchup and mayo using erythritol for the ketchup. I put the sauerkraut on top of the croutons. I mix the corned beef in the sauce and then layer it on top of the sauerkraut and then top it with cheese.

Love the casserole and this week I used the fat head pizza crust and using this recipe made a rueben pizza. Added caraway seeds to the crust when making it to add that extra flavor throughout. Turned out wonderful! Since there are only two of us it lets me make up the casserole for one night and the pizza for another - same but different at the same time. Plus the pizza travels well for dinners on the road (even cold). Thank you!

Thanks for another great adapted video. I love Reubens...a great point you made is how cost effective this is...when you eat only the "fillings" of sandwhiches, or just the toppings for pasta, rice, etc you're not usually left w a satisfying amount to eat. That gets obscenely exspensive. Thanks for this posting this wonderful adapted recipe.

i make Ruben sandwiches using the cauliflower pizza crust cut into squares...yummmmmmmm i will do that for several meals, one cookie sheets worth of cauliflower pizza crust yields 8 slices of "bread", 4 Rubens to go!!...lol
Love your videos, but without fail, the volume of this and many of your videos is much too low. I have my laptop on 100%, plus max on the video and I can barely hear you. This happens OFTEN. Please either adjust your video volume on your end or speak louder. It's almost like you are whispering and don't want to disturb a sleeping baby. Thanks.
