    Ingredients:
    hot water: 1 l (34 pt)
    salt: 20 g (0.7 oz)
    sugar: 20 g (0.7 oz)
    garlic: 10 g (0.4 oz)
    chicken legs: 6 pc
    flour: 300 g (11 oz)
    corn starch: 200 g (7.1 oz)
    sweet paprika: 10 g (0.4 oz)
    black pepper: 5 g (0.2 oz)
    salt: 10 g (0.4 oz)
    oregano: 10 g (0.4 oz)
    eggs: 2 pc
    water: 100 ml (3.4 fl oz)
    OVER MEDIUM FIRE: 10 MIN

    This is called "wet brining" there is also a "dry brining" method depending on the type of meat you are preparing. The purpose of this method is that the salt that is combined with the warm/hot water helps the tissue to breakdown. See meat tissues when cooked contract, and in turn the "juice" are released causing the meat to be tough. But the wet brine when cooked the meat actually expands, and releases the sodium that has been absorbed during the brining process. This helps the meat(s) to be tender when cooked. I highly suggest adding spices to the brine this way the meat has more of a rich flavor. But yes, very good video. (The information I provided comes from my father who is a certified chef.)     I found a recipe on youtube very close to this the only difference is they switched the hot water for simmering the chicken in hot milk or buttermilk and used the same seasonings until the chicken was half way cooked then use the same coating as this and it was the juiciest and yummiest fried chicken I have ever had! 😋😋

      Sounds fantastic, I'll have to try the hot milk or buttermilk, probably the buttermilk though because I think it will give the chicken a more rich flavor compared to the milk. Thanks for sharing.

      @@allanheinrich7184 I've only tried it with milk but I will do the buttermilk, I've heard its even better. I'm sure you will NOT be disappointed! Taste better than any Fried Chicken I every had my picky eating kids loved it. 😁😁

      I’ve marinated chicken in buttermilk but never simmered it in hot buttermilk. Not sure that would make a difference.

    I've used every different cut of a chicken and it comes out juicy inside and crispy on the outside and I 100 percent attribute this to the marinade and not over frying the chicken. Fry to an internal temperature of 165° Fahrenheit and rest the chicken for 4 to 5 minutes before serving. Mmmmmm !

    I make mine pretty much the same but I have to add onion powder to balance out the garlic powder and add more flavor. But great recipe. ❤

    Yummy..in the culinary world we call it brining the chicken , make sure the hot water cools by adding ice.. yummy 😋 it makes chicken moist..

      It should cool during the 6 hour marinade without the ice if the 6 hours are spent in the refrigerator and not just sitting out on a counter or something and if the chicken did sit out, I'd be worried about salanoma.

    Instead of using the egg flour first coating you can use buttermilk or milk and it tastes great too. Your chicken looks fantastic!

    Nice. Use buttermilk instead of water in your wet batter. Out of brine, go dry then wet then BACK to dry pressing hard on each piece. You'll have a much better result with this.

    I'm leaving this comment regarding one of the first video shots showing such a tiny pan of oil. I have found good deep frying techniques to include a very large heavy pot that can retain the temperature of the oil despite putting several pieces of chicken in.
