Why do you add some sugar to the egg, why not all the sugar in with the milk and cream at the start?

Why not use the whole egg?
I like using the whole egg. To me it makes the ice-cream mixture thicker. I don't like a thin mixture. I also don't heat up anything. Just mix it and put in the maker.
Im making this now, just finished the custard. Im going to make a mango srrawberry mix with a tiny bit of basil. Ill let you know how it works out!
