That is the dumbest functionality in cars. Because of it, the first thing I do in my Cayenne, is set it to sport. I’m sure the environment is more thankful for people driving in sport, rather than normal mode.
Good question, it does reset to auto start stop active evertime you start the vehicle. The diamond key on the steering wheel is the fastest option to shut it down after you start it.

Yeah, this guy never mentions if you have to do that every time you start up the car. And yes, it's the most annoying feature ever put in to a car.
