Ingredients
Cheesecake Filling
84g part-skim cream cheese
84g 2% cottage cheese
15g sugar
20g erythritol
2g imitation vanilla
Dry
90g all-purpose flour
102g PEScience Pumpkin Pie protein
powder
3g pumpkin spice
7g ground cinnamon
3g salt
4g baking powder
2g baking soda
.5g xanthan gum
Wet
425g pure pumpkin
2 eggs
18g avocado oil
6g imitation vanilla
40g brown sugar erythritol

Just made these. A bit of a back story. I HATE sucralose. The PEscience uses sucralose, and tasting the powder, I could taste it. Couldn't drink it in just a shake. Used all the same ingredients as described, to the tee. I am a foodie. And trying to get my macros under control, and not eat like a rabbit. Bro. One of the best muffins I've ever eaten. That was hot. I think I'd like these even MORE once the cream cheese sets, but I couldn't wait to try. This guys recipes are legit. I swear, I can't stop buying shit to make them. I know that he puts in the same time I would to do something like this, in order to get the taste, PERFECT. I never question his methods, or instructions. I follow blindly. AMAZING, AMAZING stuff. Buying your cookbook. Top of class in this space. BAR NONE, and I don't give praise like this easily.
I’ve adapted this recipe into a carrot cake muffin instead of pumpkin while keeping the measures the same and it turned out super good. Great option fore those who like me live somewhere where canned pumpkin is not available. Thanks for the recipe!
Love that you try to find a good balance between taste and macros for all your recipes! Those are the types of low calorie recipes most people actually keep in their repertoire for life. I can't wait to try these out, they look so tempting.
Finally had a chance to make these, and they are AMAZING!!! They taste like something you would get at a bakery, but so much better for you. Learning the ratio of filling for each muffin will take some learning, because I nearly ran out on the last one. But overall, a great recipe, just like all of the others I’ve tried from the cookbook. Made this and had one for breaky today. Amazing. But personal preference I like the filling added after baking and cooling those “muffin nests”, and then freeze them. Raw cream cheese batter is so good 😂

So I have switch to making mostly low/no sugar and high protein desserts over the last couple of years. A few have been good but many of them have a weird texture, taste fake or are just edible because they are 'good' for me. Most of the time my husband will not eat what I bake, except beyond maybe trying it. Occasionally he will say 'these aren't too bad.' However, i just made these today, and he said they are the first one of 'these' desserts that actually tastes like it looks -- and before that he asked me what was sitting on the counter because they looked 'wonderful'. This is such a high compliment for you. I am SO impressed by how you thoughtfully think about balance - to get the most protein and least amount of calories BUT YET still taste good and be enjoyable to eat. THANK YOU! Honestly, I would recommend your channel to more people, but most would not appreciate some of your colorful language :)

Works great to make 12 regular sized muffins. So fricken good!! my family makes pumpkin bars with cream cheese frosting in the fall. these rival that with half the fat and twice the protein. Nick, your recipes are amazing.

Have you tried substituting Allulose for sugar? I’ve found the taste and mouthfeel is basically identical to Sugar, with none of the calories. You can sub it in for sugar in any recipe, just use about 30% more than the amount of sugar you’d use since allulose is less sweet.

I've already been making pumpkin and carrot muffins by modifying your blueberry muffin recipe video. But I hadn't been able to get the cream cheese frosting right. This looks killer. Have you ever tried using a cream cheese emulsion rather than vanilla extract?

Can't tell you much at the moment. Only discovered the existence of it recently. I just started experimenting with it myself to enhance the cream cheese flavor in some some cheesecake ice creamis. I'll be trying it out in this recipe when I make it.
For anyone wondering, a bakery emulsion is similar to an extract (ie vanilla extract). Except flavor extract uses a 35% (approximate) alcohol solution to suspend the flavor compounds. A flavor emulsion suspends the flavor compounds in water and vegetable gum
*update: half vanilla and half cream cheese emulsion is really fucking good.

Could we get a chocolate mousse recipe? Theres a company called Ehrmann that make a great protein chocolate mousse but that shits expensive. The ingredient list on them is overwhelming and i wouldnt know where to start with making it myself, also protein chocolate mousse recipes i have found online dont look good or have poor macros. Whenever I get a box of pumpkin bread mix from Trader Joe's and replace all the oil with a can of pumpkin it always comes out great, never a dryness issue, so I'm not sure I buy the necessity of the oil. Maybe the protein powder messes with it or something?

1. Sugar is not necessary. Erythritol is not the only sweetener - there's sucralose, stevia, and allulose. I prefer a mix of Stevia and Allulose for the most sugar like taste: erythritol gives off yucky coolness that I just hate. Sugar spikes your blood sugar and harms your health!!! 2. You should include all macros into your recipes rather having me whip out my calculator. How many calories in 1 ? how much saturated fats? cholesterol is probably high because of the egg content. Saturated fat content probably over 6 g in one. if its 6-10 g, its a hard pass for me. dont need a heart attack thanks
