A family recipe passed down from my grandma!
water 100ml
Salt 1.5g/¼tsp
All-purpose or bread flour 150g
Olive oil or other 100ml
Green onion
Cheddar cheese
Welcome to my channel!
100ml water
1.5g salt
Mix well
150g All-purpose or bread flour
Mix well
Knead the dough with your hands
Move the dough onto a kneading board
Divide and cut the dough into 8 parts
100ml Olive oil
Take a piece of the dough
Shape the dough like this
Place the dough into the oil
Repeat
Cover and rest for 30 minutes
After 30 minutes
Take a piece of dough and place it on an oiled kneading board
Flatten the dough with your hand like this
Sprinkle some green onions
Roll up the dough like this
Repeat
Sprinkle some cheddar cheese
Roll up the dough
Low heat
Fry for 3-5 minutes on low heat
Flip and fry for another 3 minutes
Done!
For baking
Brush some egg wash.
Bake for 15 minutes at 400F/205C
After baking
These baked rolls are so delicious!
The outside is flaky and the inside is tasty and delicious!

I have limited kitchen skills and was able to accomplish this recipe, no problem! I tried the baked method and added in Chinese chives and some other different fillings. Turned out delicious! Thanks for sharing 😁❤️🍲

Do the baked version taste like spring rolls?
My mother would make this dough, keep it in the original size then spread a sheet on the dinner table and slowly start working and spreading the dough until it covered the whole table paper thin. For us kids it was magical, then she would drizzle oil and fill the sides with grated pumpkin or apple, cinnamon and sugar. Finally, she'd roll it up using the edge of the sheet, she would lift it and it would roll up on itself. That was the pumpkin/apple "pie" we grew up with.

I've seen people who make phyllo dough from scratch that starts like what you were describing. That's interesting 🤔
My friends mother made something like this during the Christmas season like you said it was done on the kitchen table and involved the use of a sheet and I was told it was much easier if 2 people involved in the rolling up of dough after the filling was spread. The filling was brown sugar, cinnamon, chopped pecans or walnuts and butter. The rolled up dough was coiled up in an oval pan and baked. My friends father was from some part of old Russia and it was the father's family that taught my friend's mother to make the dessert. It was very special in his family, an old family tradition and very much looked forward to. Being gifted one of these special desserts was to be blessed.

Quite similar to Malaysia Roti Canai (whc is a bigger size) but we use vegetable oil here, as olive oil is quite expensive. Rolling it small like what u did we call it Roti Boom. Olive oil is definitely a healthier choice ❤️

Knead with your palm not your fingers also oily or floured hands work best for sticky doughs. Have fun with it.... it's a learning experience so good luck 💙

We do the same for Moldavian traditional pies. But we use cottage cheese(with some eggs) and/or salty sheep cheese. In summer we add dill and spring onions. Ours are bigger in shape and we bake them. We use sunflower oil. You can also do them with pumpkin and sugar, potatoes with onion and apple with sugar. Basically you can be inventive with the filings.

@@shauna1103 no, we cut the apple small pieces or shred it (similar to a strudel) and add sugar on top when we already start assembling the pie.

I made these... Couldn't get the dough to the right consistency (had to add a lot more flour) but it was delicious (less flaky texture with the extra flour) with an apple compote fillingggg

These look incredible.
It's quite similar to Bastila that we have in Algeria and Morocco, we stuff it with ground meat and it's usually baked, super delicious.

Yes, this does remind Mr of B'Stilla. I'd replace with nuts and spices and add in lean ground meat.

That 1 hand (rolling) job it's another level. A LOT of practice.
Very similar to Bulgarian banitsa. We use pork fat and fill them with mixure of egg cheese and kiselo mlqko (hard to find outside of Bulgaria but can be replaced with greek yogurt)

what does the oil do to the dough?
I cooked this in the air fryer at 15mins and 200 celsius the middle was i would say slightly undercooked at maybe 96% done the rest was really crispy; preferably for me i would like more of the bready rather than over crispy so adjusting the cooking might work here - I think maybe dropping the temperature to 180 and cooking at 20mins might be the optimal setting. also make sure to pre-heat the air fryer for 5 mins at the temperature you want to cook before adding the pastries to the basket.
I’m going to make this as soon as I can. I’ve got to get a conversion table first!

What does olive oil do to flour?
What is this? Olive oil (or indeed any fat) added to sourdough actually coats the gluten forming proteins in the flour. As you know, oil and water are not friends. So the oil actually repels the water away from the flour, stopping it from being able to effectively form a gluten network.Nov 25, 2021

The baked one was awesome, the “fried” one…it looked like it was cooked in a dry skillet. I’d recommend taking some of that olive oil and a little canola oil and actually frying it, maybe even deep fry it. I’m down to do this thanks for the knowledge.
I was thinking the same exact thing however I'm wondering maybe I'll have to try it with some oil for frying it..but, I'm wondering if it would make it less flaky?
